1 tablespoon canola oil
2 cloves garlic, minced
1/2 onion, diced
1 cup ketchup
1/3 cup molasses
1/3 cup brown sugar
4 tablespoons minced chipotle peppers in adobo sauce
4 tablespoons distilled vinegar
1 tablespoon Worcestershire sauce
Dash salt

Steps:

  • Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them. Reduce the heat to low. Add the ketchup, molasses, brown sugar, chipotle peppers, vinegar (or less to taste), Worcestershire sauce and salt and stir. Allow to simmer for 20 minutes. Taste after simmering and add whatever ingredient it needs (more spice, more sugar, etc.).

3 pasilla chiles, stemmed, seeded and chopped (or 1 large dried ancho chile)
1 garlic clove, minced
1/4 cup beer, flat
1 tablespoon vegetable oil
1/2 tablespoon red wine vinegar (or rice wine)
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 tablespoon feta cheese, finely crumbled (Cotija cheese may be substituted)

Steps:

  • Combine tomatillos, chiles, and water to cover in a saucepan and bring to a boil. Reduce heat and cook, covered 5 to 7 minutes or until tender. Drain and allow to cool.
  • Pulse tomatillo mixture, garlic and next 5 ingredients in a blender or food processor until chopped. Stir in cheese.

1/2 cup packed brown sugar
1/4 cup bourbon
1/2 cup HEINZ BBQ Sauce Memphis Sweet & Spicy

Steps:

  • Place ribs on large sheet of heavy-duty foil sprayed with cooking spray. Mix sugar and bourbon until blended; spread onto ribs. Wrap in foil. Refrigerate 1 hour.
  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF. Place ribs on grate over unlit area; cover. Grill 2 hours, monitoring for consistent grill temperature.
  • Unwrap ribs; place, meat sides down, on grate over lit area of grill. Brush with 1/4 cup barbecue sauce. Grill 10 min., turning after 5 min. and brushing with remaining barbecue sauce.

This recipe is one my favorites, it is one I found one day when I was experimenting. My family and friends enjoyed it and I hope you will too!

2 ½ tablespoons garlic powder
1 ½ tablespoons white pepper
1 ½ tablespoons seasoned salt
1 tablespoon onion salt
1 teaspoon dried oregano
4 pounds pork spareribs
½ cup distilled white vinegar
12 (12 fluid ounce) cans or bottles premium lager
1 (20 ounce) bottle ketchup
1 (10 fluid ounce) bottle Worcestershire sauce
1 ½ cups maple syrup
1 cup brown sugar
1 cup liquid smoke flavoring
½ cup margarine
½ cup apple cider vinegar
½ cup honey mustard

Steps:

  • In a medium bowl, mix garlic powder, white pepper, seasoned salt, onion salt, and oregano.
  • Place ribs in a large roasting pan, and rub evenly with the garlic powder mixture to coat. Pour distilled white vinegar and 1/2 the beer, or enough to cover ribs, into the pan. Cover pan, and marinate ribs in the refrigerator 8 hours, or overnight.
  • Prepare an outdoor grill for indirect, medium heat, and lightly oil grate.
  • In a large saucepan, whisk together remaining beer, ketchup, Worcestershire sauce, maple syrup, brown sugar, liquid smoke, margarine, apple cider vinegar, and honey mustard. Bring to boil. Cover, reduce heat, and simmer 15 minutes, or until a thick sauce has formed.
  • Remove ribs from the marinade mixture, and coat liberally with the sauce. Place on the prepared grill, and cook 1 1/2 to 2 hours, to an internal temperature of 160 degrees F (70 degrees C). Brush frequently with the sauce while cooking.

In this case, I think he just wrote "creole seasoning" when in fact, this stuff tastes most authentic with a spice they sell around here in the restaurant and in stores called "Cajun Foreplay." Use it generously. Either way these are delicious, especially served with Dinosaur BBQ Cocktail Sauce (recipe # 295318). Not for wimps!

2 (16 ounce) bottles beer (or 12 oz cans)
1/2 cup cider vinegar
2 cups water
2 tablespoons Old Bay Seasoning
2 lbs shrimp, in shell large
2 tablespoons garlic, pressed (or garlic powder, to taste)
2 tablespoons creole seasoning (use Cajun Foreplay if possible)
dinosaur bbq seafood cocktail sauce (for serving)

Steps:

  • Pour beer, vinegar, and water, and Old Bay in a pot over medium to high heat and cover.
