FLUFFY CRANBERRY DELIGHT

Fluffy Cranberry Delight image

This was originally my daughter's recipe, and she or I will make it for one or more of our holiday get-togethers. It can be served as a fruit salad along with the meal or as a light dessert. It's particularly pretty in a cut-glass bowl on a buffet. -Ruth Bolduc, Conway, New Hampshire

DRUNKEN CRANBERRY SAUCE

Drunken Cranberry Sauce image

A family recipe we have used for years. We love it as a side dish to our turkey on Thanksgiving day. Also goes well on chicken, pork, and beef. Makes a great treat as an appetizer served with crackers, or can even be used over vanilla ice cream. I like to add the orange zest a couple tablespoons at a time, as not to overdo it. Adjust sweetness by adding 1 tablespoon sugar at a time at the end of cooking if needed.

Categories     Fruit Desserts

- 1 brick of cream cheese
- 1/2 cup sugar
- leftover whole type cranberry sauce( i used my own)
- 1 8 oz whip topping(coolwhip or store brand)
- 1 shot of cointreau or grand marnier

Steps:

  • Cream the cream cheese with sugar. Add Cointreau or Gran Marnier. Stir until incorporated.
  • Stir in about 1-2 cps of left over cranberry sauce, keep 1/2 cup of of cranberries on reserve.
  • Pour the mix into a bowl and fold in the whipped topping. fold in the remainder of the cranberry sauce so there will be a few whole cranberries floating around.
  • Keep refrigerated. Tart, sweet, delicious!

Tips:

  • Use a good quality cranberry juice for the best flavor. Avoid cranberry juice cocktail, which is usually sweetened and flavored.
  • If you don't have any cranberry juice, you can use another tart juice, such as orange juice or grapefruit juice.
  • Make sure the gelatin is completely dissolved before adding it to the cranberry juice mixture. Otherwise, you'll end up with lumps in your cloud dessert.
  • Chill the cloud dessert for at least 4 hours, or overnight, before serving. This will give it time to set properly.
  • Serve the cloud dessert with whipped cream, ice cream, or fresh berries.

Conclusion:
