TRADITIONAL DUCK CONFIT RECIPE

For this classic French preparation, duck legs are cured overnight before being submerged in duck fat and gently cooked until silky and tender in a low oven.

4 duck legs (about 2 1/4 pounds total; 1kg) (see note)
1 tablespoon plus 1 teaspoon (16g) Diamond Crystal kosher salt; ; for table salt, use about half as much by volume or the same weight
6 large shallots (12 ounces; 340g), quartered
1 small onion (4 ounces; 110g), cut into 2-inch pieces (see note)
6 medium cloves garlic (30g)
1/2 bunch (2 ounces; 55g) flat-leaf parsley leaves and tender stems, roughly chopped
10 sprigs fresh thyme
2 teaspoons (6g) whole black peppercorns
2 to 4 cups (475 to 950ml) rendered duck fat (see note)

Steps:

  • When Ready to Cook: Adjust oven rack to middle position and preheat oven to 225°F (105°C). Melt duck fat, either in 3-quart saucier over low heat or in a microwave-safe bowl in the microwave. Remove duck legs from cure, wiping away as much of the cure mixture as possible before rinsing legs gently under cold water to remove all seasonings; discard cure. Pat duck legs dry with paper towels, then arrange in single layer in saucier with duck fat (if using), making sure they are completely submerged in fat. Alternatively, arrange duck legs snugly in a small baking dish and cover with melted duck fat, making sure legs are fully submerged in fat.
  • Remove from oven and cool duck to room temperature in its cooking vessel, removing lid but keeping it submerged in fat. Once cool, cover container tightly and transfer to refrigerator, where confit can be stored for up to 1 month.

Meat from 4 to 8 ducks
Dale's or Moore's marinade
2 to 4 TB butter
2 to 4 TB olive oil, plus more for cooking
1/2 to 1 cup minced shallots
1/4 to 1/2 cup dried cherries, chopped
1 to 2 jalapeños (or more), seeded & finely chopped, optional
2 to 4 TB cognac or brandy
Salt & pepper, to taste
Egg roll wrappers
1 to 2 eggs, beaten

Steps:

  • Marinate the duck meat while you chop the shallots, cherries, & jalapeños. Coarsely chop the duck meat then cook in a frying pan with oil over medium heat until done. Drain, then shred in a food processor. Heat 2 to 4 TB each butter & olive oil in pan. Add shallots, cherries, & jalapeños, cooking until softened. Stir in shredded duck. Add cognac or brandy, cooking until dissolved. Season with salt & pepper. Place an egg roll wrapper on a plate or cutting board. Spread 1 to 2 TB of meat mixture across the bottom. The amount depends on how thick you want the cigars. A thinner cigar is best for an appetizer, so use 1 TB of meat. For a meal, use 2 TB meat. Fold the left side over about 1 inch, then fold the bottom over the filling. Continue to roll to form a cigar shape with one open end & one closed end. Seal with egg wash. Lightly brown in oil in a pan OR spray cigars with cooking spray & bake at 350 for 15 minutes. Serve with salsa.

VELVETY DUCK LIVER PARFAIT

600g duck or chicken liver , or a mix of both
250g pack butter , diced and slightly softened
2 shallots , finely sliced
1 garlic clove , sliced
splash each brandy or port
1 tbsp tomato purée
100g butter
1 tbsp thyme leaves
1 tsp black peppercorn
toast, gherkin and chutney, to serve

Steps:

  • Cut away and discard any large sinews from the livers, then set the livers aside. Heat about a third of the butter in a large frying pan, then gently fry the shallots and garlic for 3-4 mins unti l soft. Turn up the heat, add the livers, then fry until just browned on all sides. Add the brandy and port, boil down as quickly as possible - if the sauce catches light for an instant, then all the better. Remove the pan from the heat and leave to cool completely.
  • Season the livers generously, then tip the contents of the pan into a food processor with the tomato purée and remaining butter, and blitz until smooth. Push the mixture through a fine sieve into a bowl, taste for seasoning, then tip into a serving dish, banging the dish down on the tabletop to smooth out the surface. Place in the fridge to set.
  • Once the mixture has set, make the topping. Gently melt the butter in a small pan or in a bowl in the microwave, then leave for a min to settle and separate. Pour the yellow butter that has risen to the top into another bowl and discard the milky liquid. Leave the yellow butter to cool slightly, then mix in the thyme and peppercorns. Pour the mixture over the parfait and leave to set in the fridge. Serve with plenty of toast, sliced gherkins and chutney. Will keep for 2 days in the fridge.

Mini Chicken Cigars With Sweet and Sour Dipping Sauce image

1 1/2 lbs ground chicken
2 teaspoons ground cumin
2 teaspoons paprika
2 teaspoons poultry seasoning
2 teaspoons chili powder
2 teaspoons grill seasoning (recommended Montreal Seasoning by McCormick)
2 tablespoons chopped fresh parsley leaves (a handful)
8 sheets phyllo dough
1/2 cup butter, melted
2 tablespoons sweet plum sauce or 2 tablespoons Chinese duck sauce
2 tablespoons rice vinegar
1/4 cup light oil (such as peanut, canola, or vegetable oil)
kosher salt
fresh ground black pepper, to taste
1/2 cup finely diced mango (optional)
1 scallion, green tops only, thinly sliced on the bias

Steps:

  • For the chicken cigars: Preheat oven to 425°F.
  • Place chicken in a bowl and mix with spices and parsley. (I actually used my food processor to shred/chop chicken and mix in the spices and it worked nicely--use it to chop the parsley first and then add other ingredients).
  • Place a piece of phyllo on a nonstick cookie sheet and brush with some of the melted butter. Repeat 3 more times, placing each of phyllo over the last buttered sheet to make 4 layers. Cut layered phyllo into 16 rectangles (4 x 4).
  • On one end of each of the rectangles, place a heaping tablespoon of chicken filling. Roll up tightly to make mini "cigars". Cut each of these in half and place on a cookie sheet. (They should overlap slightly on the bottom--they will stay together nicely if you press them gently after you place them on the cookie sheet). Butter the tops of each.
  • Bake for 10 to 12 minutes, until golden brown.
  • Repeat with second half of phyllo sheets and chicken mixture.
  • Make the sweet and sour dipping sauce by whisking together plum or duck sauce and vinegar in a bowl. Stream in oil and continue whisking to combine. Season with salt and pepper. Fold in mango and sliced scallions.
  • Serve either hot or at room temperature with dipping sauce.

1 yellow cake mix
1 can (16 ounces) fruit cocktail in heavy syrup
2 1/2 cup sweetened coconut
2 eggs
1/2 cup light brown sugar
1/2 cup butter
1/2 cup sugar
1/2 cup canned evaporated milk (not sweetened condensed milk)

Steps:

  • Preheat the oven to 325 degrees fahrenheit and spray a 9x13 inch baking pan with nonstick cooking spray. In the bowl of an electric mixer, add cake mix, fruit cocktail with syrup, 1 cup of the coconut and the eggs. Mix on medium low for 2 minutes, or until well blended. Pour into prepared pan. Sprinkle with brown sugar. Bake 45 minutes, or until set but don't over bake. While cake is cooking, make topping by heating the butter, sugar and milk on medium low in a saucepan, stirring occasionally. Once it boils, boil for 2 minutes. Remove from heat and add remaining coconut. Pour over hot cake when removed from oven. Serve warm or cool.
