BEAUMONT RANCH POTATO SALAD

Beaumont Ranch Potato Salad image

I have kept this recipe a ranch secret, but I have decided to share it. This is my variation of a French classic garlic potato salad. It is different than the dish that inspired it, but very good and easy as well.

Armenian-Style Potato Salad image

Potato salad is the first food I remember eating, so I really do have a deep emotional attachment, but every so often, I crave something completely different-and this Armenian-style potato salad is completely different. And completely delicious. And, unlike American-style, completely safe left on a sunny picnic table for hours. Serve drizzled with more olive oil and garnished with more fresh mint.

Time 3h30m

Yield 8

Number Of Ingredients 14

3 pounds Yukon Gold potatoes, peeled, quartered, and sliced into 1/4-inch pieces
1 tablespoon kosher salt, or more to taste
1 tablespoon dried mint, divided
½ cup mild olive oil, divided
1 large red onion, diced
½ cup diced red bell pepper
2 cloves garlic, minced
⅓ cup lemon juice, or more to taste
½ cup thinly sliced green onions
¼ cup chopped fresh mint
2 tablespoons chopped fresh Italian parsley
¼ teaspoon freshly ground black pepper
¼ teaspoon Aleppo chili flakes
1 pinch cayenne pepper

Steps:

  • Transfer sliced potatoes into a large pot with enough cold water to cover the potatoes by a couple of inches. Stir in 1 rounded tablespoon kosher salt and 2 ½ teaspoons dried mint. Bring to a boil over high heat. Reduce heat to medium and let cook until tender, about 15 minutes, checking every 5 to 6 minutes for doneness. Drain well.
  • Transfer cooked potatoes to a large mixing bowl and let cool slightly.
  • While potatoes cool, heat ¼ cup olive oil in a skillet over medium-high heat. Add red onion, red bell pepper, garlic, and a pinch of salt; cook and stir for just 1 minute. Turn off the heat and stir in remaining dried mint.
  • Drizzle freshly squeezed lemon juice into potatoes and toss gently with a spatula. Add green onions, red onion mixture, remaining olive oil, fresh mint, fresh parsley, salt to taste, black pepper, chili flakes, and cayenne. Mix with a spatula until combined.
  • Cover with plastic wrap and refrigerate until chilled and flavors have melded, 3 to 4 hours.
  • Unwrap; stir, taste, and adjust seasonings as needed to personal tastes. The salad almost always needs more salt stirred in once it's tasted after being chilled. Serve.

DURANGO POTATO CASSEROLE

Durango Potato Casserole image

For those who like it spicy, it's easy to turn up the heat on these potatoes by adding more chili powder or jalapenos for extra kick. O.K. Although this looks tasty, it also sounds like a lot of trouble! A pan for cooking te potatoes, another for cooking bacon, another for baking?! Surely this could be modified for less mess. Cooking a dish before having to cook it again is a little much. But it not hard at all with leftover and less clean up on the dish to do.

  • My Note: It is great for breakfast or brunch, but it also is great served for dinner and guests love it! Don't be swayed from preparing this because of having to clean a few dishes and utensils. Any dish worth making is easily overlooked by having to clean up afterwards. I just clean as I cook, doesn't bother me at all.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, making them ideal for potato salad.
  • Boil the potatoes until tender, but not mushy: Overcooked potatoes will fall apart easily and make your potato salad mushy.
  • Cool the potatoes completely before assembling the salad: This will prevent the potato salad from becoming too warm and soggy.
  • Use a variety of ingredients: Add-ins like celery, onion, hard-boiled eggs, bacon, and cheese will give your potato salad more flavor and texture.
  • Choose a dressing that you like: There are many different types of dressings that can be used for potato salad, so choose one that you and your family will enjoy.
  • Garnish your potato salad: A sprinkling of fresh herbs, such as parsley, chives, or dill, will add a pop of color and flavor to your potato salad.

Conclusion:

With these tips in mind, you can easily make a delicious and refreshing potato salad that will be the star of your next picnic, potluck, or cookout. So next time you're looking for a side dish that everyone will enjoy, give potato salad a try. Experiment with different ingredients and dressings until you find a combination that you love.
