SIMPLE PESTO MAYONNAISE

Simple Pesto Mayonnaise image

I first tried Pesto mayonnaise when we were at our granddaughter's ski meet. She had a sandwich with it on it--delicious. When I got home I got some fresh basil and made some Pesto so we could have the mayonnaise. Lots of work. One day I wanted some and didn't have fresh basil--guess what? This is a yummy substitute and you can have it anytime, and it is so easy and takes only a couple of minutes. I only make enough for a few sandwiches; then make again next time.

Categories     Food & Cooking     Quick & Easy Recipes

Time 20m

Yield Makes 1 1/4 cups

Number Of Ingredients 6

1/2 cup pine nuts or walnuts
4 cups loosely packed fresh basil or parsley leaves
1/2 cup finely grated parmesan cheese
1 garlic clove
Salt and Pepper for seasoning
1/2 cup extra virgin olive oil

Steps:

  • Preheat oven to 350 degrees. Spread 1/2 cup pine nuts or walnuts on a rimmed baking sheet; toast in oven until golden and fragrant, tossing occasionally, 5 to 8 minutes. Let cool completely.
  • In a food processor, combine toasted nuts, 4 cups loosely packed fresh basil or parsley leaves, 1/2 cup finely grated Parmesan cheese, and 1 garlic clove; season with salt and pepper. Process until finely chopped. With machine running, pour 1/2 cup extra-virgin olive oil in a steady stream through the feed tube; process until smooth.

Tips:

  • Use fresh basil: Fresh basil leaves add the best flavor to pesto mayonnaise. If you don't have fresh basil, you can use dried basil, but the flavor will be less intense.
  • Use a good quality mayonnaise: The mayonnaise is the base of the pesto mayonnaise, so it's important to use a good quality mayonnaise. Look for a mayonnaise that is made with fresh eggs and oil, and avoid mayonnaises that contain a lot of additives.
  • Adjust the garlic and lemon juice to taste: The amount of garlic and lemon juice in the pesto mayonnaise can be adjusted to taste. If you like a more garlicky flavor, add more garlic. If you prefer a more lemony flavor, add more lemon juice.
  • Use pesto mayonnaise as a sandwich spread, dip, or sauce: Pesto mayonnaise is a versatile condiment that can be used in a variety of ways. Try it as a sandwich spread, a dip for vegetables or chips, or a sauce for chicken, fish, or pasta.

Conclusion:
