0.5 cup Dijon mustard
0.5 cup honey
0.25 cup mayonnaise
1 tablespoon fresh lemon juice
4 boneless, skinless chicken breast (about 1 ½ pounds)
2 tablespoon butter
1 tablespoon olive oil
8 ounce mushrooms, sliced
4 slices cooked bacon, chopped
2 cup shredded cheddar cheese
2 tablespoon fresh parsley, for garnish, optional

Steps:

  • Whisk together mustard, honey, mayonnaise, and lemon juice in a small bowl. Reserve 1/4 cup sauce in a covered container and refrigerate until serving time.
  • Meanwhile, place the chicken breast in a large plastic zipper-top bag. Pour in remaining sauce and turn in bag until evenly coated. Refrigerate at least 2 hours or overnight.
  • Preheat oven to 400 degrees F. Heat butter in a nonstick skillet over medium-high heat until foaming. Add mushrooms and saute until the mushrooms have released most of their liquid and have started to turn brown, about 5 to 7 minutes. Set aside.
  • Meanwhile, heat oil in a large oven-proof skillet or Dutch oven over medium-high heat until shimmering. And chicken breast in a single layer, discarding leftover marinade. Leave the chicken on the pan without moving until a golden-brown crust forms, about 5 minutes. Flip each piece and continue to cook until the second side is browned.
  • Divide the mushrooms evenly over the chicken. Top with bacon and cheese. Cover the skillet and place in the oven. Bake until the chicken reaches 165 degrees F, about 10 to 15 minutes.
  • Remove from oven and garnish with parsley if desired. Serve with reserved sauce on the side for dipping.

2 lbs chicken breasts (boneless, skinless)
6 tbsp honey mustard
1/2 tsp salt (divided)
1/2 tsp pepper (divided)
1/2 tsp garlic powder (divided)
8 oz baby bella mushrooms (roughly chopped)
1/2 sweet onion (thinly sliced)
1 tbsp olive oil (extra virgin)
1/2 cup crispy bacon (crumbled)
1 cup colby jack cheese (shredded)
1 tbsp parsley (chopped)

Steps:

  • Lay the chicken breast flat in a large casserole dish. Season with 1/4 tsp of each, salt, pepper and garlic powder.
  • Spread 1-2 tbsp of honey mustard on top of each chicken breast to make a nice thick layer.
  • Combine the chopped mushrooms, thinly sliced onions, oil, and remaining salt, pepper, and garlic powder in a bowl and stir to coat. Then spread the mixture over the top of the chicken and top with cheese.
  • Bake uncovered at 375˚F for about 30 minutes. Then remove the dish, crumble the bacon over the top then sprinkle cheese evenly over the dish and return to oven for 5-10 minutes, or until the chicken is cooked though (internal temp of 165˚F.)

4 slices hickory-smoked thick-cut bacon
1 ½ cups shredded mild Cheddar cheese
2 limes, halved

1/2 cup honey
1/2 cup Dijon mustard
3 tablespoons mayonnaise
1 tablespoon fresh lemon juice

4 boneless skinless chicken breast halves
2 tablespoons olive oil
6 slices bacon, cooked until crispy and cut in half
2 cups button mushrooms
1 tablespoon butter
1 cup monterey jack cheese, grated
1 tablespoon fresh parsley, chopped

Steps:

  • Whisk together honey, Dijon mustard, mayonnaise, and lemon juice in a small bowl until smooth. Reserve ½ cup of sauce and set aside. Pour remaining honey mustard sauce into a gallon-sized Zip lock bag and add chicken. Marinade for 1 hour, up to 24 hours.
  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • In a heavy-bottomed skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.

4 slices marbled cheddar and swiss cheese
1 cup mushroom
4 slices bacon
honey mustard dressing, for dipping

Steps:

  • Preheat oven to 350°.
  • On each piece of chicken, carefully layer the mushrooms first and then the bacon (position the bacon on the mushrooms so that it holds the mushrooms in place).
  • Cover and bake for 30-45 minutes or until chicken is cooked through.

5 fluid ounces Worcestershire sauce
8 slices bacon
2 tablespoons butter
8 ounces fresh mushrooms, sliced
1 (8 ounce) package Monterey Jack cheese, shredded
1 (16 ounce) container honey mustard salad dressing

Steps:

  • Place chicken in a glass dish or bowl; poke with a fork several times, then pour Worcestershire sauce in and turn to coat. Cover dish or bowl and refrigerate for about 1 hour.

Honey Mustard Marinade:
1/2 cup grey poupon dijon mustard
1/2 cup honey
1 1/2 tsp vegetable oil
1/2 tsp lemon juice
Chicken:
4 boneless, skinless chicken breast halves
1 tbsp vegetable oil
2 cups sliced mushrooms
2 tbsp butter
salt and pepper
paprika
8 slices bacon, cooked
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
2 tsp finely chopped fresh parsley

Steps:

  • Using an electric mixer, combine mustard, honey, 1 1/2 tsp oil and lemon juice in small bowl. Whip mixture for about 30 seconds. Pour about 2/3 marinade over the chicken breasts and marinate them (covered) in the refrigerator for about 2 hours. Chill remaining marinade until later. After the chicken has marinated, preheat oven to 375 degrees. and heat up an ovenproof frying pan (large enough to hold all four breasts) with 1 tsp of oil over medium heat. Sear chicken in pan for 3-4 minutes per side or until golden brown. Remove the pan from heat, but keep the chicken in the pan. As the chicken is cooking, saute the sliced mushrooms in butter in a small frying pan. Brush each seared chicken breast with a little of the reserved honey mustard marinade (not the portion the chicken marinated in), being sure to save a little extra to serve as a side. Season chicken with salt, pepper and a dash of paprika. Stack two pieces of bacon, crosswise, on each chicken breast. Spoon the sauteed mushrooms on the bacon, being sure to coat each breast evenly. Spread 1/4 cup monterey jack cheese onto each breast, followed by 1/4 cup of cheddar. Bake the pan of chicken for 7-10 minutes or until the cheese is thoroughly melted and starting to bubble. Sprinkle each chicken breast with 1/2 tsp parsley before serving. Place extra marinade in small bowl to serve on the side.
