So yummy and so easy. This is similar to sweet corn cake but cheaper. I bring this often to cook-outs in the summer, a big hit. (Note: frozen whole-kernel corn can be substituted for the canned.)

1 (8 1/2 ounce) package corn muffin mix
1 (15 3/4 ounce) can whole kernel corn, drained
1 (14 3/4 ounce) can cream-style corn
1 cup sour cream
1/4 cup butter, softened
1 egg

Steps:

  • Preheat oven to 350°F.
  • Coat a 2-quart casserole dish with non-stick cooking spray.
  • In a large bowl, combine all the ingredients; mix well.
  • Pour into the casserole dish.
  • Cover and bake for 30 minutes.
  • Uncover and bake for 30 to 35 minutes more, or until set and the top is golden.
  • Also can be an OAMC recipe. Just mix the batter, put in a freezer bag and freeze.
  • Thaw, then cook per the listed directions.

1/2 teaspoon salt

12 cups popped popcorn (i use my favorite microwave brand.)
1/2 cup butter
1 cup brown sugar
1/4 cup light corn syrup
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla
1 cup almonds, pecans or peanuts, optional

Steps:

  • 1. Preheat oven to 250 degrees. Coat the bottom and sides of large roasting pan with butter flavored cooking spray. Place popped popcorn and nuts, if using, in roaster.
  • 2. In medium heavy pan, slowly melt butter. Add brown sugar, corn syrup and salt. Gently heat to a low boil, stirring constantly. Boil on lowest heat possible without stirring for 5 minutes. Remove from heat.
  • 3. Stir in baking soda and vanilla. Gradually, pour over popcorn and nuts, coating evenly. Bake for 1 hour, stirring every 15 minutes. Remove from oven and cool completely on lightly sprayed or non-stick foil. Store tightly in ziplock bags

1 Tablespoon sugar
2 Tbsp. flour
½ tsp. salt

  • Dissolve flour in ¼ cup milk. Boil ¾ cup milk with butter and sugar. Pour flour mixture into the milk milk mixture after boil is reached to make a thin white sauce. Remove from heat and stir in salt and drained corn. Mix in eggs. Pour into a 1 to 1½ quart loaf pan. Bake at 400 degrees F for 30 minute for until done.
