1 can (15 ounces) solid-pack pumpkin
3/4 cup sugar
1 tablespoon honey
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1-1/2 cups fat-free evaporated milk
5 tablespoons reduced-fat whipped topping

Steps:

  • In a large bowl, beat the egg substitute, pumpkin, sugar, honey and spices until blended. Gradually beat in milk. Pour into five 8-oz. custard cups coated with cooking spray. Place in a 13x9-in. baking pan. Pour hot water into pan to act as a water bath. , Bake, uncovered, at 425° for 10 minutes. Reduce heat to 350°. 1 ½ cups white sugar, divided
1 cup evaporated milk
½ cup all-purpose flour
2 eggs, beaten
1 tablespoon vanilla extract
½ teaspoon salt
1 pinch baking soda
2 tablespoons ground cinnamon

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Pour melted butter into a 2-quart baking dish.
  • Whisk pumpkin, 1 cup sugar, evaporated milk, flour, eggs, vanilla extract, salt, and baking soda in a large bowl; pour into the prepared baking dish. Combine remaining 1/2 cup sugar and cinnamon in a small bowl; sprinkle over pumpkin mixture.

2 cups 2% low-fat milk
1/4 cup sugar
1 teaspoon pumpkin pie spice
1/2 cup brown rice
1/2 cup pumpkin puree
1/4 cup dried cranberries (any dried fruit works well)
1 teaspoon vanilla extract (or 1/2 bean scraped)
vanilla ice cream
pecans, chopped fine
ground cinnamon

Steps:

  • Place the rice in a mesh strainer and place under running water, stirring gently to rinse the rice thoroughly.
