1 pound tofu, sliced into 8 even pieces
2 tablespoons soy sauce
2 tablespoons agave nectar
1 tablespoon toasted sesame oil
1 teaspoon minced garlic
1 teaspoon minced fresh ginger
1 tablespoon sesame seeds, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.
  • Gently press tofu pieces to release as much water as possible. Arrange tofu on the prepared baking sheet.
  • Whisk soy sauce, agave nectar, sesame oil, garlic, and ginger together in a bowl until marinade is evenly combined. Brush half of the marinade over tofu pieces.
  • Bake in the preheated oven for 30 minutes. Flip tofu and brush remaining marinade over tofu. Sprinkle sesame seeds over tofu. Continue baking until tofu is crisp, about 30 minutes more. Transfer tofu to a wire rack using a spatula; cool.

Low-sodium soy sauce or tamari for marinating

Steps:

  • Wrap your extra firm tofu in a paper towel, place between two plates and set something heavy on top - like books or canned goods - and let sit for 10 minutes. This is to get most of the water out of the tofu so it will cook better and absorb the marinade.
  • Unwrap tofu and cut into small cubes like the pictures.
  • Preheat oven to 350 degrees, place tofu into a bowl, and cover with soy sauce. Let sit for 10 minutes.
  • Spread marinated tofu evenly on a baking sheet lined with parchment paper.

2 tablespoons soy sauce or teriyaki sauce
1 tablespoon olive oil

This is my staple tofu marinade! I add it to stir frys and salads or just eat it plain. The recipe was based on a friend's, but I altered the amounts a bit to my taste. I like my tofu best if it's frozen and unthawed before using. Time to make doesn't include marinating.

1 lb firm tofu
1/2 cup soy sauce
6 tablespoons cooking sherry
3 tablespoons lime juice
2 garlic cloves, pressed

Steps:

  • Prepare the tofu by pressing between 2 plates and something heavy (cans, textbooks, whatev). It needs to be pressed for at least 30minutes, draining the water halfway through.
  • Whisk the marinade ingredients and cube the tofu in half inch chunks.
  • Let the tofu soak up the marinade for as long as you like (at least 15 minutes, overnight is ideal).
  • Bake with the marinade in a dish at 375 degrees for 30-45 minutes. Flip the pieces halfway through baking them.
