1 lb mild Italian sausage, cut into 1/2-inch pieces
1 onion, chopped
1 green bell pepper, chopped
3 garlic cloves, minced
1 (26 ounce) jar pasta sauce with mushrooms
1 (12 ounce) package ziti pasta or 1 (12 ounce) package penne pasta, cooked and drained according to package directions
2 cups shredded mozzarella cheese, divided
1/2 cup fresh parmesan cheese, grated

Steps:

  • Preheat oven to 350ºF. Lightly grease a 9x13" baking dish; set aside.
  • In a large saucepan, cook sausage, onions, green pepper, and garlic over medium heat until sausage is browned; drain fat.

1 lb ziti pasta (or other short tube pasta)
1 (26 ounce) jar spaghetti sauce
1 cup chicken broth
1 lb ground beef (or ground turkey)
1 teaspoon italian seasoning
1/2 teaspoon garlic powder
2 cups mozzarella cheese, shredded
1 cup parmesan cheese, grated

Steps:

  • Brown the ground beef in a skillet.
  • Sprinkle with salt, pepper, garlic powder and Italian seasonings and drain.
  • Stir in the jar of spaghetti sauce and 1 cup of chicken broth.
  • Allow this to simmer while you cook the noodles.
  • Cook noodles until al dente and then drain.

This dish freezes very nicely, and is great for a repeat performance the following week.

16 ounces whole grain pasta
olive oil
15 ounces part-skim ricotta cheese
8 ounces grated part-skim mozzarella cheese
2 (15 ounce) cans prepared tomato sauce (or less depending on your taste)
grated parmesan cheese
garlic powder
frozen chopped spinach, defrosted (optional)

Steps:

  • Boil water according package directions. Add pasta and olive oil to boiling water. Cook pasta till al-dente, drain.
  • Combine Ricotta with with spinach and sprinkle with parmesan and garlic powder.
  • Pour pasta into lasagna size baking pan. Combine most of mozzarella with Pasta, reserving a small amount of Mozzarella for top. Mix in Ricotta mixture. Spread tomato sauce over the top and mix in slightly, leaving some around the edges and top. Sprinkle remaining Mozzarella on top.

I adapted this ziti dish from a number of recipes online after none of them were precisely what I wanted. I hope that you enjoy it too. The cheese is simply what I tend to keep in the fridge and therefore what I had to put the recipe together. It was a good combination, but you can substitute whatever you would like for it. Equally, you can leave out the ground beef if you'd like it to be vegetarian. I would perhaps substitute some mushrooms, spinach, etc. for it.

1 cup spaghetti sauce (I use Napa Valley Bistro's Homemade Marinara)
1/2 cup mozzarella cheese
1/2 cup sharp cheddar cheese
4 tablespoons parmigiano-reggiano cheese
1/2 teaspoon mrs dash's italian seasoning (a shake or two of the bottle)
1/4 teaspoon red pepper flakes (a shake of the bottle)
