4 pork Ribeye (Rib) chops, 1-inch thick
Salt and pepper to taste
Olive oil for brushing grill grate
1 tsp. olive oil
½ yellow onion, chopped
¼ c. ketchup
1 tbsp. brown sugar
1 tbsp. Worcestershire sauce
1 tbsp. apple cider vinegar
¼ tsp. cayenne pepper

Steps:

  • Preheat grill over medium-high heat and brush with olive oil. Season chops with salt and pepper on both sides. Place pork on grill for 8-9 min., turning once halfway through, until internal temperature is 145°F as measured by a meat thermometer. Remove pork from grill, tent with foil and rest for 3 min.
  • Spicy BBQ Sauce: Heat oil in pot over medium heat. Sauté onion until soft; add ketchup, brown sugar, Worcestershire sauce, vinegar and cayenne. Simmer for 15 min. until sauce thickens; turn off heat. Once cooled, puree sauce in blender. Serve chops with spoonful of sauce.

2 chicken thighs
30 ml teriyaki sauce (2 tablespoons)
30 ml soy sauce (2 tablespoons)
45 ml ketchup (3 tablespoons)
1 tablespoon ginger (ground ginger is OK too)
3 tablespoons caster sugar (for a helathier choice use sugar substitute)

Steps:

  • Mix all the ingredients in a bowl and let the chicken marinate for at least 20min.
  • Pre-heat the grill for 2 minutes.
  • Grill the chicken thighs for 12 minutes on each side. Do not turn more than once but make sure you rotate the grill once, so that the chicken browns evenly.

It is very sweet, so you ncan certainly cut the lemon juice/lime juice down by far. I ran out of lemon juice, hence the lime juice, but think the lime helped adda nice flavor. 2 slices bacon, Finely chopped
1/2 cup finely chopped onion
2 cups ketchup
1/2 cup firmly pakced brown sugar
1 -3 tablespoon lemon juice
1 -3 tablespoon lime juice
1 teaspoon lemon zest
2 tablespoons molasses
1 tablespoon Worcestershire sauce
1 1/2 teaspoons liquid smoke
2 teaspoons dry mustard
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat medium sauce pan over medium high heat.
  • Add chopped Bacon and cook until fat begins to render down.
  • Add Onions.
  • Cook and stir until Bacon and Onions are golden brown.
  • Remove from heat and allow to cool while prepping the remaining ingredients.
  • Combine remaining ingredients in a mixing bowl and whisk until mixed.
  • Add remaining ingredients to sauce pan with Bacon and Onion.
  • Heat gradually at medium to simmer.
  • Simmer for about 10 minutes until thickened.
  • (You can strain to remove Bacon and Onion chunks for smoother sauce).

BBQ SAUCE
1 Tbsp olive oil
1 onion, chopped
2 c water
2 c brown sugar
1 can(s) 6 ounce, tomato paste
mustard, "koops spicy brown"
pickle juice, "sechler's sweet heat mixed pickles"
BBQ ADD IN'S
left over, chicken
left over, pork tenderloin
2 medium mushrooms, chopped
1/5 c diced tomato's

Steps:

  • 1. Saute Onions in Olive oil until golden. Do not turn down the heat.
  • 2. Slowly add 1 cup of water. Let simmer until onions are caramelized.
  • 3. On a low to medium heat,(2 to 4 electric stove setting) The fallowing is a suggestive, considering every one likes their BBQ differently. Add the other 1 Cup of Water, 1 Cup Brown Sugar, 1/3 can tomato paste, 1 tablespoon mustard, and about 1 ounce(shot glass) of pickle juice to the caramelized onions. Let simmer, stirring occasionally to prevent burn.
  • 4. Now that you have your base, continue to add the remainder of your ingredients one at a time, until you have the flavor and thickness you desire. If you want it to be more sweet just add more Brown Sugar. Too sweet add more mustard or tomato paste. You can play with this recipe all you want, it will still turn out delicious.
  • 5. After your sauce has developed a nice base and is thickening, (should be about 2 hours of slow stir's and adding extra ingredients, if your sauce is still too thin at this time, let it simmer longer)you can add your meat of choice, mushrooms, tomato's and let simmer a while longer.
  • 6. For the finalization. Toast some buns, add some cheese, top with lettuce and enjoy! Side of tortilla chips..
  • 7. You can freeze the sauce for future meals.
  • 8. Helpful hint. Each time you stir your sauce, try it.. Make sure the flavor is to your taste. You will need to occasionally add water. Allow the sauce time to thicken and simmer the acidity of the tomato paste out.
  • 9. ENJOY!!
