Time 50m

Number Of Ingredients 9

3 c broccoli florets, uncooked
2 c cubed cooked chicken
1 can(s) (10.75 oz.) condensed cream of chicken soup
1/2 c hellman's mayonnaise
1/2 c grated parmesan cheese
1/2 tsp salt
1/2 tsp curry powder
1 c cubed fresh bread
2 Tbsp butter, melted

Steps:

  • 1. Bring water in a saucepan to a boil. Cook broccoli, covered, until crisp-tender; drain.
  • 2. Place cooked broccoli in a greased 11x7x2-inch baking dish; set aside.
  • 3. In a large bowl, combine the chicken, soup, mayonnaise, Parmesan cheese, salt and curry powder. Spoon over broccoli. Top with bread crumbs and melted butter.
  • 4. Bake in a preheated 350-degree oven for 25-30 minutes or until heated through and slightly golden.

Tips:

  • Choose fresh broccoli: Look for broccoli with vibrant green florets and firm stalks. Avoid broccoli with yellow or wilted florets, as this indicates that it is not fresh.
  • Cut the broccoli into uniform florets: This will help them cook evenly. If the florets are too large, they may not cook through properly.
  • Steam the broccoli: Steaming is the best way to cook broccoli because it preserves its nutrients and bright green color. You can steam broccoli in a steamer basket over boiling water, or you can use a microwave steamer.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender-crisp, but not mushy. Overcooked broccoli will lose its nutrients and flavor.
  • Use a good quality Parmesan cheese: The type of Parmesan cheese you use will make a big difference in the flavor of the dish. Look for a Parmesan cheese that is aged for at least 12 months.
  • Serve the broccoli Parmesan immediately: This dish is best served hot and fresh out of the oven.

Conclusion:

Broccoli Parmesan is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to get your daily dose of vegetables, and it is also a good source of protein and calcium. With its crispy breadcrumb topping and cheesy Parmesan sauce, Broccoli Parmesan is sure to be a hit with everyone at your table. So next time you're looking for a quick and easy side dish, give Broccoli Parmesan a try!
