- Preheat oven to 350 degrees F. Lightly grease a 13x9 baking dish or spray with nonstick spray.
- In a large mixing bowl, mix together flour, oats, brown sugar, baking soda, and salt until well combined. Mix in melted butter, egg, and vanilla until well combined.
- Spread about 2/3 of mixture onto bottom of prepared baking dish to form an even thin crust layer. You may need to use the back of a fork or your hands to spread evenly. Set remaining crust mixture aside.

- Preheat the oven to 400 degrees F (200 degrees C).
- In a large bowl, cream together the brown sugar, butter and shortening until smooth. Combine 1 3/4 cups flour, oats, baking soda and salt; stir into the creamed mixture until well blended.
