1 large egg
3/4 cup panko breadcrumbs, white or whole wheat
1 teaspoon garlic powder
1 teaspoon dried Italian herbs
1/2 teaspoon kosher salt
2 boneless, skinless chicken breasts, cut into chunks
Nonstick cooking spray
1 cup ketchup
1/3 cup packed dark-brown sugar
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1 teaspoon paprika

Steps:

  • For the nuggets: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Beat the egg in a shallow bowl. Place the panko, garlic powder, Italian herbs and salt in a separate shallow bowl and stir to combine.
  • One at a time, dip the chicken chunks in the egg and then in the breadcrumbs. (Keep one hand dry to help adhere the breadcrumbs to the chicken.) Make sure the chicken chunks are completely coated. Place on the prepared baking sheet.
  • Spray each nugget with nonstick spray. Bake until browned and cooked through, 18 to 20 minutes.
  • For the barbecue sauce: In a small saucepan, stir together the ketchup, brown sugar, vinegar, Worcestershire sauce, garlic and paprika. Bring to a boil, stirring frequently. Reduce the heat to low and simmer until thickened, 2 to 3 minutes. Serve with the nuggets.

I made these today for a daycare and they were a big hit. The taste reminds me of french fries. They were so good I didn't even dip them in anything. So easy to make. Use flavored mayo to mix it up a bit. They dont keep very well as the potato flakes will soak up moisture and become mashed.

1/4 cup mayonnaise
1 cup instant potato flakes

Steps:

  • Pre-heat oven to 400 degrees.
  • Cut chicken breasts into "nuggets"
  • Rinse and dry nuggets.
  • Put in bowl and coat with mayo.
  • Put potato flakes in different bowl and coat nuggets.
  • Place nuggets on baking sheet and put into oven for about 20 minutes or until done, flipping once to brown evenly.

1 pound chicken breasts, boneless & skinless cut into chunks
1/4 cup old fashioned oats (also known as 5 minute oats)
1/4 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon kosher salt
3/4 cup panko bread crumbs
1 tablespoon parmesan cheese, grated

Steps:

  • Preheat oven to 375° F.
  • Place the first 6 ingredients in a food processor until chicken is finely chopped and ingredients are combined.
  • Place the bread crumbs and parmesan cheese in a shallow bowl or on a plate and stir to combine.
  • With moistened hands, roll 1 tablespoon of chicken mixture between your palms and flatten it into a "nugget" shape.
  • Gently press nuggets into bread crumbs to evenly coat them.
  • Place nuggets on a cooling rack. Place cooling rack over a foil-lined baking sheet.
