I love this easy homemade cinnamon roll recipe because it allows me to skip the first rise, and I can get them on the table a lot sooner. We usually top with cream cheese, but we have used buttercream.

1 cup milk
⅓ cup butter
2 eggs, room temperature
4 cups bread flour, divided
½ cup white sugar
2 ½ teaspoons rapid-rise yeast
1 teaspoon salt
1 tablespoon vegetable oil
¾ cup packed brown sugar
2 ½ tablespoons ground cinnamon
⅓ cup butter, softened

Steps:

  • Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
  • Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
  • Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
  • Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.
  • Pour vegetable oil over dough and turn to coat. Cover and let rest for 10 minutes.
  • Turn dough out onto a lightly floured surface and use your hands to shape into a small rectangle. Roll dough out into a rectangle that is about 1/4-inch thick.
  • Mix brown sugar and cinnamon together in a small bowl. Spread 1/3 cup softened butter over dough and sprinkle with cinnamon-sugar mixture. Roll dough into a log and cut into 12 equal pieces.
  • Place rolls, cut-side down and almost touching, into a greased 9x13-inch pan. Cover loosely with plastic wrap and let rise until doubled in size, 30 to 40 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 15 to 20 minutes. Remove from the oven and immediately turn out onto a tray or plate to cool; this allows the inside mixture to drip back into the rolls as they cool.

2 ¼ cups Hungry Jack® Pancake and Waffle Mix, divided

1 teaspoon cinnamon
2 tablespoons melted butter, divided
2 ounces cream cheese, softened

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8x8 pan.
  • Combine the apples and syrup in a saucepan and cook over medium heat until the juice from the apples is gone. Set aside to cool.
  • Mix together 2 cups pancake mix, milk, and 1 tablespoon syrup until a soft dough forms. Sprinkle the counter with the remaining pancake mix and knead the dough a few times. Make sure you keep enough pancake mix under the dough. Gently press the dough into a 12x8 rectangle using your hands.
  • Spread the cooled apples on top of the dough.

  • Mix warm water and yeast packet from bread mix together in a bowl and let stand until foamy, about 5 minutes.

Steps:

  • Spray a 9" square pan with Pam or what have you.
  • Place two tablespoons of melted butter in pan, add brown sugar and on top of that hot water, then add your nuts.
  • Separate the biscuits.
  • Roll each one first in melted butter, then roll in the cinammon sugar mix.
  • Place in pan standing up.
  • When you have finished all the biscuits, pinch them so they sit tightly in a circle in the pan.
  • Pop into a 400 degree oven and bake for 22-25 min.
  • When done immediately flip upside down onto a plate and enjoy!

Steps:

  • Roll dough out to an 18x8 inch rectangle on a floured surface.
  • Brush dough with 2 Tbs. melted butter.

1 cresent (seamless dough sheet)
butter, softened
1 Tbsp cinnamon
1/3 c sugar
1/2 c chopped pecans

Steps:

  • 1. Ingredients 1 Crescent Dough Sheet, cinnamon, butter, pecans, sugar
  • 2. Open the Crescent roll container and unroll and flatten.
  • 3. Take a spoon and with the backside press in to the softened butter, spread softened butter on flattened Crescent single sheet, cover all area of sheet.
  • 4. In a small container add sugar and cinnamon, stir well to blend.
  • 5. Scoop out tablespoon at a time of cinnamon/sugar mix and spread all over the buttered sheet.
  • 6. Spread chopped pecans on cinnamon/sugar covered sheet.
  • 7. Starting on one end of sheet begin to roll up, taking care to keep ends even. Pat ends to make even.
  • 8. With a strip of dental floss, slide under the rolled sheet about 1 1/2" wide and twist to cut through. Or you can use a serrated knige and cut carefully in to pieces.
  • 9. Place in a butterd cake pan keeping a space between the rolls. Bake at 350 degrees for 10 minutes or until just golden brown.
  • 10. Remove from oven and cool slightly. Add frosting to each one. Frosting recipe: 1 cup powdered sugar 2 tb of softeded butter pinch salt 1/2 teaspoon instant coffee granules 1/2 teaspoon vannilla extract 3 tb half and half or alittle more if you like the frosting thinner. Mix well with spoon until creamy and smooth.
  • 11. Add chopped pecans to warmed frosting. Enjoy warm or cold.

3 cups flour
1/4 teaspoon salt
4 teaspoons baking powder
1/2 cup sugar
2 eggs
2/3 cup milk
1/2 teaspoon pure vanilla extract
1/2 cup butter or 1/2 cup shortening, melted
1/2 cup white sugar
1/4 cup melted butter
1 1/2 teaspoons cinnamon, the stronger the better
1/2 cup brown sugar
1/2 cup broken walnuts or 1/2 cup pecans
3 tablespoons melted butter
1 cup powdered sugar
2 tablespoons warm milk
1 tablespoon melted butter
1/4 teaspoon pure vanilla extract

Steps:

  • Sift flour with salt, baking powder and sugar into a large mixing bowl, and make a well in the center of the dry ingredients. In another bowl, beat eggs until well mixed, pour into the center of the dry ingredients, along with milk, pure vanilla extract, and butter, which should be melted and cooled slightly, so it is warm, not hot. Mix by hand with a wooden spoon, or on the lowest speed with a mixer.
  • Once the dough is holding together, turn out onto a floured board, knead for 1 minute. This dough is easy to work with-if it seems sticky, sprinkle a bit more flour onto it as you work. Turn the dough over once or twice as you are kneading, then roll the dough out into a rectangular shape about 1/4 inch thick. Shoot for about a 9" by 13" rectangle, just like a baking pan, but don't worry if it is a bit bigger or smaller.
  • Combine the filling ingredients, mixing well in a small bowl, then spread onto the dough using a flexible spatula, the back of a spoon or a pastry brush, smoothing out from the middle to 1/2 inch from the edge. Roll the dough up into a jellyroll from the long side, and, using a sharp knife, cut the dough as evenly as possible into 18 pieces.
  • Mix the topping together in a small bowl. Use spray oil to grease a muffin pan, then divide the topping between 18 muffin tins. After dividing up the topping, place one piece of dough, cut side down, in each muffin tin, on top of the walnut mix. Bake in a preheated 350° oven for 20-25 minutes, until golden brown.
  • Remove the cinnamon rolls right away to cool, if some of the topping stays in the tin, just pull it out with a spoon and replace it on top of the muffin while it's still hot. Prepare the icing by whisking all the ingredients together while the rolls cool for at least 10 minutes,. Cinnamon Rolls look great served upside down or rightside up. Pick which you prefer, drizzle with icing and serve.

1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
3 tablespoons unsalted butter, melted and cooled
3/4 cup confectioners' sugar
2 tablespoons light cream cheese, softened
2 tablespoons buttermilk

Steps:

  • Adjust an oven rack to the upper-middle position and heat the oven to 425 degrees. Line an 8-inch square baking pan with a foil sling and spray with vegetable oil spray.
  • For the Filling: Mix all the ingredients together in a small bowl.
  • For the Dough: Whisk the flour, granulated sugar, baking powder, baking soda, and salt together in a large bowl. In a medium bowl, whisk the buttermilk and 2 tablespoons of the melted butter together. Stir the buttermilk mixture into the flour mixture until the dough comes together but looks shaggy, about 30 seconds. Pat the ends to even them and slice the cylinder into 9 evenly sized rolls with a serrated knife. Slightly flatten each piece of dough to seal the open edges and keep the filling in place.

1 tablespoon butter, melted
3 tablespoons half-and-half or milk
1/2 teaspoon vanilla extract

Steps:

  • Combine the sugar and cinnamon in a small bowl. Set aside. If using 12 rolls, squish them together to form a big ball. Roll dough out on a floured surface to form a 16x12-inch rectangle. Pour the 1/2 stick melted butter over the top of the dough rectangle and spread it almost to the edges with your hand. Generously sprinkle the cinnamon sugar mixture over the butter. Starting with a long side of the rectangle, roll it up jelly-roll style as tightly as possible into a long roll, ending with seam side down. With a sharp knife, cut into 12 even slices. This recipe makes 32 cinnamon rolls that are so easy to make, and you can even add dried fruit, or fresh/frozen blueberries for an added surprise.

1 box french vanilla cake mix
5 1/4 c all purpose flour
2 pkg active dry yeast
1 tsp salt
2 1/2 c warm water
1/2 c cinnamon & sugar mix
1/2 c butter, melted
3/4 c pecans, in pieces
1 c powdered sugar
3 Tbsp milk
1/2 tsp lemon juice
1/2 tsp vanilla extract

Steps:

  • 1. Stir together the cake mix, yeast, flour, salt, and warm water.
  • 2. Let rise in a warm place (free from drafts) about an hour.
  • 3. Turn dough out onto a well-floured surface; divide in half.
  • 4. Roll one portion into an 18 x 12 inch rectangle. Brush with half of the melted butter and sprinkle with half the cinnamon/sugar mix, then half the pecans. Roll up starting at the long end; cut crosswise into 16 (1 inch) slices. Place rolls into a buttered 9 x 13 inch pan.
  • 5. Repeat with the remaining dough.
  • 6. Cover and chill for 8 hours, or overnight. Remove from the refrigerator, and let stand for 30 minutes.
  • 7. Bake at 350 degrees for 20-25 minutes, or until golden. Cool slightly.
  • 8. Stir together powdered sugar, milk, vanilla, and lemon juice. Drizzle over warm rolls and sprinkle with remaining pecans.

I learned to make cinnamon rolls using canned biscuits as a teen in school so I thought to try it this way and they were fast, easy and delicious!

2 (8 ounce) cans crescent rolls
2 tablespoons cinnamon
3 tablespoons sugar or 3 tablespoons Splenda sugar substitute
1/4 cup margarine, soften
2/3 cup confectioners' sugar
2 drops vanilla
2 teaspoons milk

Steps:

  • Preheat over to 350°.
  • Unroll crescent rolls and separate.
  • Spread a small amount of margarine on each roll but don't do the tips.
  • Sprinkle with sugar to your taste and then sprinkle with a small amount of cinnamon. Sprinkle to your taste on the cinnamon and sugar, some like less and some more.
  • Roll up into the crescent shape and after rolling all crescents spread the remaining sugar and cinnamon out of surface and roll each roll in the mixture to coat. Bake tip side down for 10 to 13 minutes or until golden brown.
  • Mix confectioners sugar, vanilla and milk together and strudel over each roll. You may need more cinnamon and sugar to do all rolls my measurements are approximated according to individual taste.
  • Can use Splenda and low fat crescent rolls for those on low sugar/low fat diets.

You can use regular crescent rolls and press the edges together (make sure they are sealed) or the seamless crescent dough. I add pecans, but any nut will work and they are great without nuts too! 1 pkg crescent rolls or crescent dough sheet
1 Tbsp butter, softened to spread
3 Tbsp brown sugar
2 Tbsp white sugar
1/4 c nuts, chopped small
2 tsp cinnamon, ground
DRIZZLE
1 Tbsp butter, melted
1 Tbsp orange juice (milk will work too)
1/4-1/2 c powdered sugar

Steps:

  • 1. Preheat oven to 375 degrees F. Grease a 9 inch pie plate or cake pan.
  • 2. Unroll dough from can. If using the regular crescent rolls, press seams together, making sure they are sealed. Brush dough with butter, getting all the way to the edges.
  • 3. Sprinkle white sugar over butter, followed by brown sugar and cinnamon. Add chopped nuts if desired. Spread all the way to the edges.
  • 4. Starting on the long side of the dough, carefully roll the dough up into a log. Cut the dough into 8 pieces with a serrated knife. Carefully lift rolls to pan and arrange in a circle. Bake at 375 degrees F for 15 minutes, oven temps may vary so bake until golden brown.
  • 5. Let rolls cool about 3-5 minutes and move them to a plate. using a fork, drizzle the topping over the rolls. Serve warm!
  • 6. DRIZZLE: In a small bowl, melt the 1 T butter, add 1 T orange juice and stir well. Add powdered sugar until the consistency you like is reached. I like ours a little thicker, so I use closer to 1/2 cup of the powdered sugar. If it gets to thick, just add a few more drops of liquid. Milk will work in the place of the juice if you want a more traditional drizzle!

Tips:

  • Use fresh, active yeast for best results. Old or inactive yeast will not produce enough gas to make the rolls light and fluffy.
  • Proof the yeast in warm water with a little sugar before adding it to the dough. This will help to activate the yeast and ensure that it is working properly.
  • Let the dough rise in a warm place until it has doubled in size. This will take about 1-2 hours.
  • Roll out the dough to a thickness of about 1/4 inch. If the dough is too thick, the rolls will be dense and heavy. If the dough is too thin, the rolls will be dry and crumbly.
  • Spread the filling evenly over the dough. If you are using a wet filling, such as fruit preserves, be sure to drain the excess moisture before spreading it on the dough.
  • Roll up the dough tightly, starting from the long side. Pinch the edges of the dough together to seal the roll.
  • Place the rolls in a greased baking dish. Leave some space between the rolls so that they have room to rise.
  • Let the rolls rise again for about 30 minutes, or until they have doubled in size.
  • Bake the rolls in a preheated oven at 350 degrees Fahrenheit for about 20-25 minutes, or until they are golden brown.
  • Serve the rolls warm with butter, cream cheese, or your favorite glaze.
