Steps:
- In a small skillet, heat 1/2 T olive oil over medium heat until shimmering. Add 1/2 c sliced mushrooms. Saute until limp and browned, 5-8 minutes. Remove from heat and set aside.
- In a soup pot, heat remaining 1 T olive oil and butter until butter melts and foaming subsides. Add onions and saute 1-2 minutes until beginning to soften. Add garlic, mushrooms, salt, pepper, thyme and bay leaf. Cook until mushrooms collapse and exude liquid, about 8-10 minutes.
- Add chicken broth, beef broth, Worcestershire sauce and sherry. Simmer 10 minutes. Remove and discard bay leaf.
- Add cream cheese and half-and-half. Stir until cheese is melted. Using an immersion blender, puree the soup until smooth. Simmer an additional 10 minutes. Serve with a few pieces of sauteed sliced mushrooms on top.
Tips:
- Use fresh mushrooms for the best flavor. If using dried mushrooms, rehydrate them in hot water before adding them to the soup.
- Sauté the mushrooms in butter or olive oil until they are browned and fragrant. This will help to develop their flavor.
- Use a good quality chicken broth. A homemade broth will give the soup the best flavor, but a store-bought broth can also be used.
- Add a splash of white wine to the soup for a touch of acidity. This will help to balance out the richness of the soup.
- Season the soup to taste with salt and pepper. You may also want to add a pinch of thyme or rosemary for extra flavor.
- Serve the soup hot with a side of crusty bread or crackers.
Conclusion:
Cream of mushroom soup is a classic comfort food that is perfect for a cold night. It is easy to make and can be tailored to your own taste. With a few simple ingredients, you can create a delicious and satisfying soup that the whole family will enjoy.
