Time 30m

Number Of Ingredients 10

4 Tbsp. butter (divided)
4-5 cloves garlic (minced)
28 oz chicken broth ((3 3/4 cups))
2 1/2 c. milk (add more if needed)
1 lb. linguini
kosher salt and black pepper (to taste)
1 tsp. basil
2/3 c. Parmesan cheese
4 c. broccoli (optional)
2 chicken breasts

Steps:

  • In a large, 5-6 quart skillet, heat 2 Tbsp. butter over medium heat. If you don't have a large skillet, a stock-pot works well, too. Add garlic and cook for about a minute.
  • Add chicken broth, milk, remaining 2 Tbsp. butter, pasta noodles, salt and pepper, and basil. Bring to a boil, stirring occasionally.
  • Once boiling, reduce heat to a simmer stirring occasionally for 16-20 minutes or until noodles have cooked through. If you are wanting to add broccoli, add it after about 10 minutes into the simmering process.
  • Stir in Parmesan when noodles are finished cooking and add a little milk if necessary if necessary to reach your desired consistency.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Cook the noodles al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture of cooked pasta. The noodles should be tender but still have a slight bite to them. To achieve this, cook the noodles for the amount of time specified on the package, then drain them and immediately rinse them with cold water to stop the cooking process.
  • Use a good quality cheese: The cheese is one of the main ingredients in creamy noodles, so it's important to use a good quality cheese that will melt smoothly and evenly. Some good options include cheddar, Parmesan, and Gruyère.
  • Don't overcrowd the pan: When you're cooking the noodles, don't overcrowd the pan. This will prevent the noodles from cooking evenly and will make them more likely to stick together.
  • Add the cream and cheese gradually: When you're adding the cream and cheese to the noodles, do it gradually and stir constantly. This will help to prevent the sauce from curdling.
  • Season to taste: Once the sauce is cooked, season it to taste with salt, pepper, and other spices. You can also add some fresh herbs, such as parsley or basil, for a pop of flavor.

Conclusion:

Creamy noodles are a delicious and easy-to-make dish that can be enjoyed by people of all ages. With a few simple ingredients and a little bit of time, you can create a creamy noodle dish that is sure to impress your family and friends. So next time you're looking for a quick and easy meal, give creamy noodles a try. You won't be disappointed!
