QUICK, EASY, CREAMY, TOMATO PASTA SAUCE
A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

- When the tomatoes have cooked down, add the ricotta, milk and hot sauce.
- Blend with a hand blender to make the sauce smooth.
- Drain the pasta and toss with the sauce.
- Top with the veggies, green part of the spring onion and parmesan cheese if desired.
- Salt and pepper to taste.
Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your pasta dish shine. Look for high-quality pasta, cheese, and vegetables.
- Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Overcooked pasta will be mushy and unpleasant.
- Use a large skillet or pot: You'll need a large skillet or pot to cook the pasta and sauce together. A small skillet will make it difficult to stir the pasta and sauce evenly.
- Season the pasta water: Add a generous amount of salt to the pasta water before cooking the pasta. This will help to flavor the pasta.
- Don't rinse the pasta: Rinsing the pasta after cooking will remove the starch, which will make it difficult for the sauce to stick to the pasta.
- Use a flavorful sauce: The sauce is what really makes a creamy pasta dish special. Choose a sauce that is flavorful and creamy, such as a cheese sauce, Alfredo sauce, or pesto sauce.
- Add some vegetables: Vegetables add color, flavor, and nutrients to a creamy pasta dish. Some popular vegetables to add include broccoli, cauliflower, zucchini, and spinach.
- Garnish with fresh herbs: Fresh herbs, such as basil, parsley, or chives, can add a bright, fresh flavor to a creamy pasta dish.
