2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.

CRISPY HASH BROWN

Crispy Hash Brown image

Make and share this Crispy Hash Brown recipe from Food.com.

Provided by Shesbittersweet

Categories     Potato

Time 20m

Yield 4 serving(s)

Number Of Ingredients 3

3 tablespoons olive oil, canola oil or 3 tablespoons grapeseed oil
1 lb russet baking potatoes, peeled and grated
salt and pepper

Steps:

  • Heat 3 Tbsp of oil in a large frying pan on medium high heat.
  • While the pan is heating, squeeze out as much moisture as you can from the grated potatoes. It's easiest to do this with a potato ricer, using it much like you would a garlic press, except you don't force the potatoes through the ricer. You just press out the moisture. If you don't have a ricer, use paper towels to squeeze out as much moisture as you can from the grated potatoes.
  • When the oil in the pan heats up to the point of shimmering, but not smoking, add the grated potatoes, spreading them out along the bottom of the pan. The potatoes should not be too thick in any one place, no more than a half inch thick. Sprinkle some salt and pepper on the potatoes. After a few minutes, lift up one edge of the potatoes and see how done they are. If they have fried to a golden brown they are ready to flip. Use a large spatula to flip the potatoes over all at once, or divide the large potato cake into halves or quarters and flip. Continue to cook until they are golden brown on the bottom.

Tips:

  • For crispy hash browns, use cold potatoes. This will help them hold their shape and brown evenly.
  • Shred the potatoes using the large holes of a box grater. This will create long, thin shreds that will cook evenly.
  • Squeeze out as much moisture from the shredded potatoes as possible. This will help them crisp up.
  • Heat the oil in a large skillet over medium-high heat. This will help the hash browns cook evenly and prevent them from sticking.
  • Don't overcrowd the skillet. Cook the hash browns in batches if necessary.
  • Press down on the hash browns with a spatula while they are cooking. This will help them flatten out and cook evenly.
  • Flip the hash browns when they are golden brown on the bottom. Cook for an additional 2-3 minutes, or until they are golden brown on the other side.
  • Season the hash browns with salt, pepper, and other desired seasonings.
  • Top the hash browns with cheese and other desired toppings. Place the skillet in the oven and broil until the cheese is melted and bubbly.
  • Serve the hash browns hot with your favorite dipping sauce.

Conclusion:

Crispy fried cheese-topped hash browns patties are a delicious and easy-to-make breakfast, lunch, or dinner option. They are perfect for using up leftover potatoes and cheese. You can also customize them to your liking by adding different toppings and seasonings. So next time you're looking for a quick and satisfying meal, give this recipe a try.
