¼ cup olive oil
2 large onions, diced
⅓ cup curry powder, or to taste

Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
  • Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

EASY CHICKEN CURRY

Easy Chicken Curry image

Weeknight cooking doesn't get any easier than this endlessly adaptable five-ingredient, 30-minute curry from Mark Bittman. Sauté a pile of chopped onions in a little oil, then stir in curry powder (or red curry paste for Thai flavors). Pour in a can of coconut milk and swirl to combine. Add chicken, simmer until it's cooked through and finish with some chopped tomatoes. And dinner is served! This recipe lends itself to experimentation, so change it up. Be generous with spices. Toss in chopped bell pepper or carrots with the onions. Add a can of drained chickpeas or a generous handful of fresh spinach with the tomatoes. Instead of chicken, try shrimp, duck, turkey, firm fish, tofu, lump crab meat or beef. Just watch the cooking time: Fish, shrimp and crab cook faster than other meats. Also, don't forget to season as you go with salt and pepper.

Provided by Mark Bittman

Categories     dinner, easy, quick, weekday, one pot, main course

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 tablespoons canola, corn or other neutral oil
2 large onions, peeled and sliced
Salt and freshly ground black pepper to taste
2 teaspoons curry powder
1 can unsweetened coconut milk (1 1/2 to 2 cups)
1 1/2 pounds peeled shrimp or boneless chicken, cut into 3/4- to 1-inch chunks
1 cup peeled, seeded and diced tomato (canned is fine; cut up and drain before using)
Chopped basil or mint for garnish (optional)

Steps:

  • Place oil in a large skillet; turn heat to medium-high. A minute later, add onions, along with a generous pinch of salt and some pepper. Cook, stirring occasionally, until onions are very soft and almost falling apart, 15 minutes or more. Stir in curry powder, and cook, stirring, for another minute or so.
  • Add coconut milk, and cook until it thickens, about 2 minutes, stirring occasionally. Add chicken, and stir, then cook until done, 3 to 6 minutes. (If you use shrimp, keep in mind that it cooks a little faster than chicken; if you are in doubt about whether chicken is done, cut into a piece.)
  • Add tomato, and cook another minute; adjust seasonings as necessary. Serve over rice, garnished with basil or mint, if desired.

2 chicken stock cubes
2 liters water
1 (15 ounce) can coconut milk
1 teaspoon salt (adjust according to taste)
1/2 teaspoon fresh ground pepper (adjust according to taste)

Steps:

  • In a large pot add water, chicken stock cubes, salt pepper. Bring to a boil.
  • Add chicken, reduce to medium heat. Let simmer about 10 minutes.
  • Add potatoes, carrots, onions. Let simmer about 20 minutes.
  • Add curry powder, ginger, garlic, salt & pepper. Reduce to low heat. Let simmer about 10 minutes.
  • Once the potatoes are fully tender, remove from heat and add coconut milk.
  • Puree with hand blender.
  • Serve with Basmati rice and enjoy!
  • *** Notes: 1. Try not to substitute the fresh ginger or garlic for powdered or paste. This will really alter the overall taste (and not in a good way.). 2. Shake the can of coconut milk before using. Most of the coconut flavor is in the bits that settle at the bottom of the can. 3. You can add chilli powder to make this spicier. It really depends on how hot the curry powder you use is. I usually use a blend of very hot Madras curry powder and very mild Caribbean curry powder.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and avoid scrambling to find things while you're cooking.
  • Use Fresh Ingredients: Whenever possible, use fresh ingredients for the best flavor. This includes using fresh herbs, spices, and vegetables.
  • Don't Be Afraid to Experiment: Curries are a great way to experiment with different flavors and ingredients. Try adding different vegetables, fruits, or spices to your curry to create a unique dish that's all your own.
  • Serve with Rice or Naan: Curries are traditionally served with rice or naan. Rice is a good option for soaking up the flavorful sauce, while naan can be used to scoop up the curry and vegetables.
  • Garnish with Fresh Herbs: When you're ready to serve your curry, garnish it with fresh herbs like cilantro or parsley. This will add a pop of color and flavor to the dish.
