1 1/2 cups Gold Medal™ self-rising flour
1/2 cup sugar
1/2 cup butter or margarine

1 egg, beaten
3 cups sliced fresh plums, peaches, apples or pears
1/2 cup sugar
1/2 teaspoon ground cinnamon
3 tablespoons butter or margarine, melted

Cut in 1/2 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture resembles coarse crumbs. Add milk and egg; stir just until blended. Spread batter evenly in pan.

Tips:

  • Use fresh or frozen fruit: Fresh fruit gives the coffee cake the best flavor, but frozen fruit can also be used. If using frozen fruit, thaw it completely before adding it to the batter.
  • Don't overmix the batter: Overmixing the batter can make the coffee cake tough. Mix just until the ingredients are combined.
  • Use a bundt pan or loaf pan: A bundt pan or loaf pan is the best pan to use for baking coffee cake. A 9x13 inch pan can also be used, but the coffee cake will be thinner.
  • Bake the coffee cake until a toothpick inserted into the center comes out clean: This is the best way to tell if the coffee cake is done baking.
  • Let the coffee cake cool before serving: This will help the coffee cake to hold its shape and make it easier to slice.

Conclusion:

Fruit coffee cake is a delicious and easy-to-make breakfast or brunch treat. With its moist crumb, sweet glaze, and abundance of fresh fruit, it's sure to be a hit with everyone who tries it. So next time you're looking for a special treat, give this fruit coffee cake recipe a try. You won't be disappointed!
