1/2 a cucumber
200g tomatoes
1/2 iceberg lettuce
1 red onion
6-8 tortilla wraps/ flatbreads / thin pittas - i prefer tortillas
homemade/pre-made tzatziki
1/2 a cucumber

3 tbsp Olive Oil
3 tbsp Lemon Juice
3 Garlic Cloves (minced/finely chopped)
1 tbsp oregano
1 tsp salt
Freshly cracked black pepper
6-8 Boneless Skinless Chicken Thighs

Steps:

  • Prepare the Chicken Marinade first. Get a large bowl. Combine olive oil, lemon juice, garlic, oregano, salt and pepper. Add the Chicken Thighs and give it a mix with your hands. Make sure you get into all the nooks and crannies. Add more oregano if necessary. Leave for 30ish minutes.
  • Prepare wrap ingredients. Slice tomatoes, slice cucumber into half moon shapes, THINLY slice onions and slice the lettuce.
  • Add the marinated chicken to a medium-heat skillet or frying pan for 5-7 minutes. Cook in 2 batches to avoid over crowding the pan (this should allow it to brown nicely). Once nicely browned and cooked through leave to rest on a chopping board for 5 minutes before slicing.
  • Build the wraps. Toast the flatbread or tortilla on a frying pan. I place a tortilla directly onto the gas as this gives a nice charred flavour. You may prefer to heat in frying pan.
  • Build the wraps - tortilla/flatbreat, then lettuce, onion, cucumber, tomatoes.and tzatziki. Be careful not to over fill, just a little of each is best. Slice the rested chicken and add to the wrap. And enjoy!
  • To wrap the tortilla properly, first fold up from the bottom, the fold the two adjacent sides over.

2 -3 tablespoons sun-dried tomatoes (the oil-packed type, easier if you can find pre-sliced)
1 -2 tablespoon kalamata olive (pitted and sliced)
1 tablespoon light cream cheese with roasted garlic
3 tablespoons roasted red peppers (the sliced kind in a jar)
1/4 cup cucumber (about 1/6 of a long english, cut in strips)
10 spinach leaves
2 tablespoons reduced-fat feta cheese

Steps:

  • spread the cream cheese on the tortilla in a line, leave some room at one end and use it to stick the olives and feta to it, pile everything else on top of your line.

1/4 cup lemon juice
2 tablespoons olive oil
1 tablespoon prepared mustard
1-3/4 teaspoons minced garlic, divided
1 teaspoon dried oregano
1 pork tenderloin (1 pound)
1 cup chopped peeled cucumber
1 cup reduced-fat plain yogurt
1/4 teaspoon salt
1/4 teaspoon dill weed
8 flour tortillas (6 inches)
1/2 cup chopped green onions

Steps:

  • In a large resealable plastic bag, combine the lemon juice, oil, mustard, 1-1/4 teaspoons garlic and oregano; add the pork. Seal bag and turn to coat; refrigerate for 2 hours. , In a small bowl, combine the cucumber, yogurt, salt, dill and remaining garlic; cover and refrigerate until serving., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare the grill for indirect heat using a drip pan. , Grill tenderloin, uncovered, over direct medium-high for 2-3 minutes on each side. Place meat over drip pan and grill, covered, over indirect medium-hot heat for 10-15 minutes longer or until a thermometer reads 160°. Let stand for 5 minutes., Meanwhile, wrap tortillas in foil; place on grill for 1-2 minutes on each side or until warmed. Slice tenderloin into strips; place on tortillas. Top each with 3 tablespoons yogurt sauce and 1 tablespoon green onions.

1 cup unpeeled cubed cucumber
1/2 cup reduced-fat sour cream
2 teaspoons red wine vinegar
1/3 cup crumbled feta cheese
1/4 teaspoon fresh ground black pepper
1/8 teaspoon dried mint flakes
1 lb lean boneless leg of lamb, cub into 1/4 inch slices
1 onion, cut into quarters and thinly sliced
1 teaspoon all purpose Greek seasoning
4 (8 inch) flour tortillas
1 large tomatoes, thinly sliced
1 cup packed baby spinach leaves

1 large vine ripened tomato
50cm piece of cucumber
6 kalamata olives , optional
2 very large soft tortilla wraps
50g feta cheese
2 heaped tbsp hummus

Steps:

  • Roughly chop the tomato, cut the cucumber into sticks and split and stone the olives (if using).
  • Now heat the tortillas. If you have gas, put each one for 10 seconds on a lit gas ring - you have to be a little bit brave - then turn it over quickly, using tongs, and heat the other side for another 8 seconds or so. The tortillas will be slightly charred in places, which adds a fantastic flavour. If you don't have gas, warm a pan to a medium heat before quickly tossing in your tortillas one at a time. You don't need to have any oil on the pan.
  • Make a row of tomato, cucumber, feta and olives down the centre of each warm tortilla. Now spread the hummus around the top and sides of the tortilla. Fold in the sides to seal in the ingredients and roll up tightly to make a big cigar. Cut in half and eat with your fingers.
