This is my super easy guacamole recipe - always a hit!

4 large avocados
2 clove garlic
1/2 c fresh chopped salsa (mild, medium or hot)
1 large lime
1 tsp hot sauce

Steps:

  • 1. In a medium sized mixing bowl: Cut the avocados into small chunks (1/2 cubes). Add the garlic - you can smash and chop it, put it through a garlic press, or (as I prefer) use a zester or very small grater and grate it right into the bowl. Add the zest of the lime. Add the juice of the lime. Add 1/2 cup of fresh chopped salsa (mild, medium or hot according to your preference), mostly drained (you want the veggies, not the juice). Add one teaspoon of hot sauce (I like Tabasco or Franks). Stir it all together until you have a nice chunky guacamole.
  • 2. This recipe is quick and easy to make because I use the fresh chopped salsa (not the bottled stuff - the fresh salsa from the deli/cheese aisle). It has the tomatoes, onions, peppers and cilantro that I would otherwise have to prep individually. It's a great time saver.
  • 3. If you want a little more heat, lime or garlic, add to desired taste. (I tend to use a little more of each - I start with the basics above, and then add to taste.)

2 ripe avocados
1/2 red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Steps:

  • 1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.) 2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours. Keep the tomatoes separate until ready to serve. Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste. 3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready. 4 Just before serving, add the chopped tomato to the guacamole and mix. Variations For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados. You don't need to have tomatoes in your guacamole. To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guacamole with a little cottage cheese added to it is my favorite.

EASY MEATBALLS TOPPED WITH GUACAMOLE

This is not my original recipe -- but I did tweak it. It is a recipe by talented local food editor, Barbara Joubert, of Sarie (a popular Afrikaans woman's magazine). Her recipes are usually very practical, economical and easy. This is a fat meatball, which she called "a burger without the bun". I added some extra seasoning and used an organic (shop-bought) guacamole because no ripe avo's were available. Serve as a main, or in a bun if you like. We use metric weights and measures, but I give the American equivalents in brackets.

500 g pork sausages (2 lbs 2 oz approx., real British-style pork bangers)
500 g ground beef (2 lbs 2 oz approx, don't use very lean ground, just ordinary ground beef)
1 medium onion, finely chopped (red is nicest but I used a sweet onion)
1 tablespoon thyme leaves, fresh (can use dried as well)
1 tablespoon lemon zest (usually 1 lemon, I used a tablespoon)
3 garlic cloves, finely chopped
1 teaspoon Tabasco sauce (or other hot sauce) (optional)
1 tablespoon Worcestershire sauce
1 teaspoon seasoning salt (any you like)
1/2 teaspoon black pepper, coarsely ground
1 egg, large
2 tablespoons olive oil (for frying, use more if necessary)
250 g guacamole (8 oz, make your own or buy ready-made)

Steps:

  • Remove the pork sausage meat from the skins, and mix with the ground beef with a fork or your hands, but do not compress too much.
  • Set oven at 180 deg C or 350 deg F, while you prepare the onion, zest, etc.
  • Add the finely-chopped onion, thyme, lemon zest, chopped garlic, hot sauce. Worcestershire sauce, seasoned salt and pepper. (Mix in the ingredients as you add them).
  • Break in the egg. Mix in well, until ingredients are well incorporated.
  • Use a utensil which can go on both your hob and also into the oven. (The new kind of non-stick black stoneware is absolutely amazing, otherwise use an oven-safe skillet).
  • Heat the pan well and add the olive oil. Form 6 - 8 fat, generous meatballs, and fry on both sides until nicely browned but not done.
  • Put the pan or dish with the meatballs in the pre-heated oven, and bake for about 15 to 20 minutes longer.
  • Serve with large blobs of guacamole, and salad ingredients. Or use as a main meat dish with veggies and salad.

EASY NEVER FORGOTTEN GUACAMOLE
