- In a large nonstick skillet, heat 1 tablespoon oil over medium-low heat; swirl to coat pan. In a small bowl, lightly beat together eggs, 2 teaspoons water, and 1/4 teaspoon salt. Pour into pan; cook, pulling in egg from edge of pan, until set, about 2 minutes. Transfer to a plate; when cool enough to handle, cut into strips.
- In pan, heat remaining tablespoon oil over mediumheat. Add scallions and garlic; cook until fragrant, about 1 minute. Add ham and rice; season with salt. Cook, stirring often, until very hot, about 5 minutes.
- Add vinegar, peas, and eggs; cook until very hot, about 2 minutes.

That is probably why it doesn't taste like most fried rice, because soy sauce has A LOT of salt in it. This recipe makes a lot!

Steps:
- Put 3 tbs oil in a large pan and heat up.
- Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.
- Once done add in the rest of the oil, onion, garlic, carrot, peas, and ham, mixing it all in together and letting this cook for 5 minutes.
- Then push rice to the side of pan and drop in the eggs and scramble them, making sure the pieces are small.
- Once eggs are done, incorporate them into the rest of the fried rice and add in the soy sauce, mixing well.
- Let cook for another 5 minutes, and serve.
Tips:
- Use day-old rice for best results, as it will be less sticky and easier to separate.
- If you don't have any day-old rice, you can cook fresh rice and spread it out on a baking sheet to cool quickly.
- Use a large skillet or wok to cook the rice, as this will help it to cook evenly.
- Add the rice to the skillet or wok last, after the other ingredients have been cooked, as this will help to prevent it from sticking.
