1 1/2 cups mashed overripe bananas (about 11 ounces or 3 large)
1 large egg
1/3 cup plain Greek yogurt (I used nonfat. OK to substitute vanilla, though the bread will be a bit sweeter.)
2 tablespoons canola oil ( or melted cooled coconut oil*)
1/3 cup light brown sugar
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups white whole wheat flour
3/4 cup semisweet chocolate chips ( or chopped dark chocolate (optional))

Steps:

  • Place the rack in the center of your oven and preheat the oven to 350 degrees F. Lightly grease an 8 x 4-inch loaf pan with nonstick spray and set aside.
  • Mash the bananas in the bottom of a large bowl until mostly smooth.
  • Whisk in the egg, then the yogurt and oil.
  • Whisk in the brown sugar, maple syrup, and vanilla. Sprinkle the baking soda, cinnamon, and salt over the top, then stir until combined.
  • Gently stir in the flour until barely combined, then fold in any mix-ins.
  • Scrape the mixture into the prepared pan. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Check at the 35-minute mark and tent with foil if the bread is browning too quickly at the corners. Place the pan on a wire rack and let cool for 15 minutes. 3 eggs
½ cup milk of your choice
2 tbsp canola/vegetable oil
3 tbsp sweetener of your choice ((I used raw sugar but you can use honey or coconut sugar))
3 cups rolled oats
2½ tsp baking powder
1 tsp salt
1 tsp ground cinnamon
½ cup dark chocolate chips
1 tsp vanilla extract

Steps:

  • Add the bananas, eggs, milk, oil, sweetener, oats, baking powder, salt and cinnamon to a blender in that order. (Adding the wet ingredients first will allow the blender to easily blend the batter.)
  • Blend until smooth, stopping and scraping down the blender if needed.
  • When the batter is smooth, fold in the chocolate chips with a rubber spatula.
  • Pour the batter into the prepared loaf pan then transfer to the oven.
  • Bake the banana bread for 1 hour and 20 minutes, covering with foil after 30 minutes if the bread is browning too fast.
  • The banana bread is ready when it is golden brown and risen and firm to the touch. A skewer inserted should come out with moist crumbs.
  • Remove the banana bread from the oven and allow to cool for 20 minutes in the pan before removing and allowing to cool completely on a wire rack.

low-fat spread, for the tin, plus extra to serve
140g wholemeal flour
100g self-raising flour
1 tsp bicarbonate of soda
1 tsp baking powder
300g mashed banana from overripe black bananas
4 tbsp agave syrup
3 large eggs, beaten with a fork
150ml pot low-fat natural yogurt
25g chopped pecan or walnuts (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the flours, bicarb, baking powder and a pinch of salt in a large bowl.
  • Mix the bananas, syrup, eggs and yogurt. Quickly stir into dry ingredients, then gently scrape into the tin and scatter with nuts, if using. Bake for 1 hr 10 mins-1 hr 15 mins or until a skewer comes out clean.
