Categories     Potatoes

Time 20m

Number Of Ingredients 6

3 medium potatoes, washed and cut into 1 inch cubes
1 pkg dry onion soup mix
1 tsp lawry's california blend garlic salt
1 Tbsp dried parsley
1 tsp ground black pepper
1/2 c canola oil

Steps:

  • 1. Put everything except the potatoes into a gallon-size sealable plastic bag. Seal and mash the mixture until well blended.
  • 2. Add the potatoes and seal the bag again. Turn the bag over repeatedly to cover the potatoes with the herb mixture.
  • 3. In a shallow microwaveable dish, lay the plastic bag with the potatoes.
  • 4. Spread the potatoes to make a even layer and unzip the bag about half way so that the steam can escape. Don't let the herb and oil mixture spill out of the bag.
  • 5. Place in the microwave and cook on high for 8 minutes.
  • 6. Stir and check to see if the potatoes are tender. If not, continue to cook for 1 minute intervals until desired tenderness.
  • 7. Great served with butter, sour cream and/or cheese.

Tips:

  • Choose the right potatoes: For this recipe, it's best to use small potatoes that are firm and waxy, such as Yukon Gold, Red Bliss, or New Potatoes. These hold their shape well and won't fall apart during cooking.
  • Cut the potatoes evenly: This will help them cook evenly. If you're using small potatoes, you can simply halve or quarter them. For larger potatoes, cut them into 1-inch cubes.
  • Boil the potatoes until they're almost tender: This will prevent them from becoming mushy when you roast them. To check if they're done, insert a fork into the center of a potato. It should go in easily, but there should still be a little resistance.
  • Coat the potatoes in oil and herbs: This will help them crisp up in the oven. You can use any type of oil you like, but olive oil or avocado oil are good choices. As for the herbs, you can use a variety of fresh or dried herbs, such as rosemary, thyme, sage, or oregano.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and fluffy on the inside. Aim for a temperature of 425°F (220°C).
  • Serve the potatoes immediately: They're best enjoyed hot and fresh out of the oven. You can garnish them with additional herbs or a sprinkle of cheese if desired.

Conclusion:

Easy Herbed Potatoes are a versatile and flavorful side dish that can be enjoyed with a variety of meals. They're perfect for everyday dinners, potlucks, and holiday gatherings. With just a few simple ingredients and a little bit of time, you can create a delicious and satisfying dish that everyone will love.
