EASY LENTIL SOUP!

Easy Lentil Soup! image

I really like to make single-serving meals. This is by far one of the easiest, laziest recipes I have ever made. But it's delicious.

Provided by michelle

Categories     One Dish Meal

Time 2h15m

Yield 1 large bowl, 1 serving(s)

Number Of Ingredients 4

1/4 cup lentils
1/4 cup white rice
1 (1 1/4 ounce) package Lipton golden onion soup mix
2 cups water

Steps:

  • Soak lentils in water for at least two hours. You can soak them longer if you like them softer, but I prefer mine a little harder. Sometimes, I soak them while I'm away at work, and that's ok too.
  • Drain lentils.
  • Add together lentils, water, and Onion Soup Mix. Bring to a boil.
  • When the water starts boiling, throw in the lentils.
  • Simmer with a lid on for about 15 minutes, or until the rice is tender.
  • Enjoy!

Tips:

  • Use a variety of lentils: Different lentils have different flavors and textures, so using a mix can add depth and complexity to your soup. Lentils hold their shape well, making them a perfect addition to hearty soups.
  • Sauté your vegetables: Sautéing the vegetables before adding them to the soup helps to develop their flavor and adds a richer taste to the broth.
  • Use a flavorful broth: The broth is the base of your soup, so it's important to use a flavorful one. You can use chicken, vegetable, or beef broth, or even a combination of different broths.
  • Add spices and herbs: Spices and herbs can help to enhance the flavor of your soup. Some common spices and herbs used in lentil soup include cumin, coriander, garlic, onion, and thyme.
  • Don't overcook the lentils: Lentils can become mushy if they are overcooked, so be sure to cook them until they are just tender.
  • Serve with your favorite toppings: Lentil soup can be served with a variety of toppings, such as bread, crackers, shredded cheese, or a dollop of sour cream.

Conclusion:

Lentil soup is a delicious, healthy, and affordable meal that is perfect for a cold winter day. It is also a great way to use up leftover lentils. With a few simple ingredients and a little bit of time, you can easily make a pot of lentil soup that the whole family will enjoy. So next time you're looking for a quick and easy meal, give lentil soup a try!
