¼ cup butter

1/2 pound dried rotini pasta
Olive oil cooking spray
6 slices thick-cut good quality bacon
2 tablespoons unsalted butter
1 white onion, finely chopped
1 clove garlic, finely chopped
Pinch ground nutmeg
Salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 cups whole milk
2 cups grated sharp Cheddar
1 cup grated mozzarella
1 cup panko breadcrumbs
1/2 cup Parmesan
3 tablespoons chopped fresh chives
1 tablespoon olive oil
1 store-bought pizza dough, rolled out and spread on a well-oiled baking sheet

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of water to a boil and cook the rotini al dente. Drain and spray with olive oil cooking spray, making sure the noodles are coated well. Set aside.
  • In a large saute pan over medium-high heat, cook the bacon until crispy. Remove to a paper towel-lined plate. Remove all but 1 tablespoon of the bacon drippings and add the butter. Add the pasta to the cheese sauce and stir to coat. Cover and keep warm.
  • In a small bowl, add the breadcrumbs, Parmesan, chives and olive oil. Add the rest of the crumbled bacon and add it to the bowl, stirring well to combine.
  • Spray the pizza dough with the olive oil spray and place into the oven for 7 minutes. Remove from the oven and set down. Spread the macaroni and cheese on the pizza, being careful to leave a 1-inch border. Sprinkle with the breadcrumb mixture on the macaroni and cheese and bake in the oven for 10 minutes. This recipe is a long time family recipe......or so I thought... This is in a family cookbook that I got back in 1988 and we have been using this recipe even before the cookbook came out... It's easy, it's fun, and I have yet to see a kid, (or adult for that matter!), that hasn't like this recipe... We switch up on toppings, but pepperoni always seems to be the favorite. Also, adjust the amount of sauce and cheese to your liking. My father still makes this for himself by just cutting all the ingredient amounts in half and cooking in a 9 x 9 inch baking dish.
