2 cups chopped cooked ham
2 boiled eggs (, peeled and chopped)
2-3 stalks celery (, sliced thin)
1/4 cup minced red onion
1/2 cup diced bell pepper
2 Tablespoons minced parsley
1 cup mayo
1/4 cup distilled vinegar ( or apple cider vinegar)
3 Tablespoons sugar
1 Tablespoon prepared mustard
1 teaspoon garlic powder
1/2 teaspoon paprika
1 teaspoon salt (, or to taste)
1/2 teaspoon black pepper

Steps:

  • Prepare the pasta: Fill a large bowl (big enough to hold cooked pasta) halfway with ice water. Boil pasta to package instructions. Drain pasta, rinse with cold water and shock the pasta by adding it to the cold water to get it cold fast. Once cold, drain the pasta, transfer to a large bowl and set aside.
