It's sweet but still a meatloaf. The cornmeal and brown sugar just made it out of this world! Also, once cooked, they are very easy to store and pack up for leftovers. EASY STOVE TOP MEATLOAF

Easy Stove Top Meatloaf image

This is the easiest and best tasting meatloaf I've ever had. My family loves it too! It's extremely versatile. To easily add variety, try varying the sauce used in and on the meatloaf -- use ketchup for traditional, but you can use just about anything else! I've listed this with my favorites flavor. This makes an excellent OAMC or freezer meal as well. Finally, it can even be cooked in the crock pot instead of the oven, on high, for about 3-4 hours or on low all day. Don't add any liquid.

This is the meatloaf recipe my family has used my whole life. I love it! Of course, we have to double to whole recipe, using 2 to 3 pounds ground beef, the whole package of onion soup mix, and a 12 fluid ounce can of Carnation evaporated milk. This is good with baked potatoes and some Bush's baked beans. (or any other vegetables: corn, peas...) I hope you like it!

INCREDIBLY MOIST & EASY CROCK POT MEATLOAF

Incredibly Moist & Easy Crock Pot Meatloaf image

This recipe takes just 5-10 minutes to throw together. Then, by the magic of my buddy the slow cooker, you are free to spend the day as you wish. Moist, flavorful, comforting, quick and easy. By mixing everything in a zip lock bag, cleanup is a snap. Original recipe was found in a little cookbook that came with my crock pot many...

Provided by Family Favorites

Categories     Meatloafs

Time 5h10m

Number Of Ingredients 18

DRY INGREDIENTS
1/2 tsp dried ground sage
1 tsp salt
1/4 tsp black pepper
2/3 c italian bread crumbs
2 tsp dried minced onion
WET INGREDIENTS
3/4 c milk or 1/2 & 1/2
2 eggs, slightly beaten
ADDITIONAL INGREDIENTS
1 1/2 lb ground beef chuck
SAUCE (ADD LAST 35-45 MINUTES OF COOKING TIME)
1/4 c ketchup
1/2 tsp worcestershire sauce
3 Tbsp brown sugar
1/2-1 tsp dried mustard
1/4 tsp garlic powder
1/4 tsp natural hickory liquid smoke, optional but yummy

Steps:

  • 1. In a large plastic ziplock bag, combine all dry ingredients. Then, add the wet ingredients to the bag and mix thoroughly.
  • 2. Add ground beef chuck until uniformly mixed. Try not to over mix. Form into a round loaf. (I usually refrigerate for a little while to firm up, but it's not necessary. In fact, you can make the loaf the day before and refrigerate until ready to use.)
  • 3. Cut 2 lengths of aluminum foil approximately 29" long. Fold lengthwise 3 times. You will end up with two strips of foil approximately 3 1/2" x 29" long. Spray your crock pot with butter flavored cooking spray. I use a standard-size crock pot, approximately 9" across its round top. Place your two lengths of foil in the form of an "X" in the crock pot. This will act as a sling to lift the meatloaf out easily when it is done cooking. Spray foil with non-stick spray as well. If ends stick out of the top of the crock pot, simply fold them down into the pot.
  • 4. Add meatloaf to crock pot. Cover and cook on low for 5-5 1/2 hours. About an hour before the meatloaf is done, combine all of sauce ingredients. Pour sauce on top of meatloaf 35-45 before the end of cooking time.
  • 5. When meatloaf is done, lift carefully out of crock pot with your foil sling to a serving platter.

EASY PORK MEATLOAF

EASY PORK MEATLOAF image

I had been wondering why I never hear about meatloaf made with pork, so I decided to find out. Turns out people do make pork meatloaf, so I set out to create my own. I think it's a winner! Photo: www.life123.com

Provided by Ellen Bales

Categories     Meatloafs

Time 1h30m

Number Of Ingredients 8

2 lb ground pork
2 eggs
1 pkg stove top stuffing mix for pork
1 pkg mccormick's pork gravy mix
1 c water
1/2 c chopped onion
1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. In a large bowl, combine the pork, onion, and stuffing mix. Beat the eggs slightly and add to the mixture. Add salt and pepper.
  • 2. In a small saucepan, prepare the pork gravy mix as directed. Add half the cooked gravy to the meat mixture; reserve the other half gravy and keep warm.
  • 3. Shape the meat mixture into a loaf and place in a standard loaf pan.
  • 4. Bake in a preheated 350-degree oven for 1 hour and 15 minutes. Remove from oven; pour off any grease.
  • 5. Top meatloaf with remaining half of the gravy. (May microwave the gravy for 30 seconds if it is no longer warm.) Let meatloaf stand for 5 minutes before slicing.

Tips:

  • Choose the Right Meat: Select a combination of ground beef and pork for a moist and flavorful meatloaf. You can also use ground turkey or chicken for a leaner option.
  • Add Aromatics: Incorporate sautéed onions, celery, and carrots to enhance the flavor of the meatloaf.
  • Use Seasonings Generously: Don't be shy with seasonings like garlic powder, onion powder, paprika, and salt and pepper. These spices add depth and complexity to the meatloaf.
  • Bind the Mixture Well: Use a combination of eggs, bread crumbs, and milk to bind the meatloaf mixture together. This will help it hold its shape during baking.
  • Glaze for Perfection: Brush the meatloaf with a glaze made from ketchup, brown sugar, and mustard before baking. This will give it a glossy and flavorful crust.
  • Cook to the Right Temperature: Use a meat thermometer to ensure that the meatloaf reaches an internal temperature of 160°F (71°C). This will ensure that it is cooked thoroughly and safely.
  • Let it Rest: Allow the meatloaf to rest for 10-15 minutes before slicing and serving. This will help the juices redistribute, resulting in a more moist and flavorful meatloaf.

Conclusion:

With careful preparation, attention to detail, and the right ingredients, you can create a delicious and moist meatloaf that will be a hit at any meal. Experiment with different flavor combinations and glazes to find your perfect recipe. Remember, practice makes perfect, so don't be afraid to try new things and adjust the recipe to suit your taste preferences.
