1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

This is actually a recipe of my grandmother's that I have sized down. Her recipe feeds about a dozen people, but now that I am living on my own, the recipe makes way more food than is necessary for the amount of people I need to serve. So I tried sizing it down, and it worked, because there wasn't anything left for leftover. (This recipe can easily be doubled, tripled, or even quadrupled to meet your families needs.)

1 lb ground beef, thawed
1 egg
1/3 cup oatmeal
1 cup chopped onion (about one large onion)
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon lemon pepper (regular pepper will also work)
1/4 teaspoon kosher salt (regular salt will also work, kosher is what we prefer)
1/4 cup ketchup

Steps:

  • Preheat oven to 350 degrees.
  • In medium mixing bowl, break beef into small chunks.
  • Add egg, oatmeal, onion, spices, and ketchup.
  • Mix until well blended (you can mix with your hands, but if you prefer not to use that method, a large mixing spoon or rubber spatula will also work just fine).

2 lbs extra lean ground beef
1 (120 g) chicken stove top stuffing mix
1 cup water
2 eggs, beaten
1/2 cup ketchup, divided (or a full cup if you like ketchup as much as I do)

Steps:

  • Heat oven to 375°F.
  • Place meat, stuffing mix, water, eggs and 1/4 cup ketchup in large bowl.
  • Mix just until blended.
  • Shape into loaf in 13x9-inch baking dish.
  • Top with remaining ketchup. Bake 1 hour or until meatloaf is done (160ºF).
