EASY RED PASTA SAUCE

Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. CLASSIC RED SAUCE

Classic Red Sauce image

Provided by Food Network

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 8

1 28-ounce can whole peeled tomatoes
2 tablespoons extra-virgin olive oil
1/3 red onion, medium-diced
3 cloves garlic, cut into chunks
Pinch of red pepper flakes (optional)
Kosher salt and freshly ground pepper
2 tablespoons torn fresh basil
1 pound penne or spaghetti, cooked until al dente

Steps:

  • Puree the tomatoes to a smooth, creamy consistency in a food processor or with an immersion blender. (If you like a more country feel, you can wait and break them up in the pan later with a wooden spoon.)
  • Heat the olive oil over medium-high heat in a large saucepan. When hot, add the onion and saute 5 to 6 minutes, or until soft. Add the garlic and cook 2 to 3 minutes, until you see the color start changing. If you'd like to make the sauce spicy, add the red pepper flakes.
  • Add the tomatoes and season with salt and pepper to taste. Reduce the heat to medium low and simmer about 30 minutes. (If you did not puree the tomatoes, use a wooden spoon to break them into pieces while they cook.) Strive for balance in the consistency of the sauce: It has to be fluid, but it should not look overly wet. Add the basil and remove from the heat. Toss with just-cooked pasta.

Tips:

  • Use fresh, ripe tomatoes: The quality of your tomatoes will greatly affect the taste of your sauce. Choose tomatoes that are in season and have a deep, red color. If you can't find fresh tomatoes, you can use canned tomatoes, but be sure to choose a brand that uses high-quality tomatoes.
  • Don't overcrowd the pan: When you're cooking the sauce, don't overcrowd the pan. This will prevent the sauce from cooking evenly and will make it more likely to splatter.
  • Simmer the sauce for at least 30 minutes: Simmering the sauce for at least 30 minutes will help to develop the flavors and thicken the sauce. You can simmer the sauce for longer if you want a thicker sauce.
  • Add a little sugar to balance the acidity: If you find that the sauce is too acidic, you can add a little sugar to balance it out. Start with a small amount and add more to taste.
  • Season the sauce to taste: Once the sauce is cooked, season it to taste with salt, pepper, and any other desired seasonings.

Conclusion:

With these tips in mind, you can make a delicious and versatile red pasta sauce that can be used in a variety of dishes. Whether you're making a simple pasta dish or a more complex lasagna, a great red pasta sauce is a key ingredient. So next time you're looking for a quick and easy meal, give this red pasta sauce a try. You won't be disappointed!
