Tips:
- Use fresh vegetables for the best flavor. If you can't find fresh red peppers, you can use roasted red peppers from a jar.
- Don't overcrowd the pan when roasting the vegetables. They should be in a single layer so that they can roast evenly.
- Season the vegetables generously with salt and pepper. This will help to bring out their flavor.
- If you're using a store-bought lasagna noodle, be sure to cook it according to the package directions.
- Don't overcook the lasagna. It should be cooked until the noodles are tender and the cheese is melted and bubbly.

This easy roasted red pepper and mushroom lasagna is a delicious and hearty dish that's perfect for a weeknight dinner. It's also a great way to use up leftover vegetables. TheRoasted red peppers and mushrooms add a lot of flavor to this dish, and the creamy ricotta and mozzarella cheese make it extra rich and decadent.
