4 cups potatoes, cleaned and sliced thin
1 cup reserved potato water
1 pound ground pork sausage
1 cup thinly sliced onions (optional)
1 cup cheddar cheese, shredded
3 Tablespoons margarine or butter
1/4 cup flour
1 cup milk

Steps:

  • Preheat oven to 375 degrees F. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
  • Boil the cleaned, sliced potatoes for 5 minutes in salted water. Reserve 1 cup of cooking water; drain the remaining water.
  • Brown pork sausage loosely; drain excess grease.
  • In a small saucepan; melt margarine. Add flour and stir until smooth.
  • Slowly add 1 cup reserved potato water and milk; whisking over medium heat until smooth.
  • In the casserole dish, layer all cooked, drained potatoes, add layer of onions on top.
  • Top with drained sausage and shredded cheese.
  • Pour white sauce over the entire casserole. Season with salt and pepper, if desired.
  • Cover with foil, and bake for 45 minutes. Remove from oven, and let sit for 10 minutes before serving. (Optional: remove foil the last 10-15 minutes of baking for a crusty cheese topping.)

3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.

3/4 cup 2% milk
1/2 cup chopped onion

2 cups shredded cheddar cheese

1 lb pork sausage (hot or regular)
20 ounces diced potatoes, with onion, refrigerated, Simply Potatoes
1 teaspoon butter
1 teaspoon seasoning salt
1 teaspoon black pepper
12 eggs, lightly beaten
8 ounces shredded mild cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a medium baking dish.
  • Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
  • Remove sausage to a separate plate.
  • Add the butter to the same skillet and replace over medium heat.
  • Add the package of diced potatoes.
  • Cook and stir until lightly browned and slightly crispy on the outside.

5 medium potatoes, peeled and cubed
1 ½ pounds breakfast sausage
6 ounces chorizo sausage
1 ½ large green bell peppers, chopped
1 large onion, chopped
2 (4 ounce) cans sliced mushrooms, drained
20 large eggs
½ cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 11x13-inch baking dish with cooking spray.
  • Place cubed potatoes in a large microwave-safe bowl and partially cover with a lid. Microwave on high for 4 minutes. Remove from the microwave and spread on the bottom of the prepared baking dish.
