1 lb ground beef
1 (20 ounce) box instant mashed potatoes (8 serving size)
2 cups frozen mixed vegetables
1 (8 ounce) can beef gravy
2 tablespoons garlic powder
salt
pepper
paprika

Steps:

  • Preheat Oven to 325'F.
  • Use vegetable spray on casserole dish.
  • Prepare instant mashed potatoes following box directions.
  • Boil frozen vegetables in saucepan.
  • Brown ground beef.
  • Add 1/2 can of beef gravy.
  • Add garlic powder.
  • Stir until well blended.
  • Drain vegetables.
  • Add the beef mixture to casserole dish.
  • Add the vegetables and spread evenly.

Whenever I bring it to a carry-in, I am inevitably asked for the recipe! I highly recommend you use Certified Angus Beef when preparing this dish ... you will taste the difference!

2 lbs certified angus beef ground beef
2/3 cup yellow onion, chopped
1/2 cup celery, chopped
2 garlic cloves, minced
2 lbs potatoes, peeled
4 tablespoons butter
2 carrots, sliced
15 3/4 ounces beef broth
4 tablespoons flour
1 cup cheddar cheese, shredded

Steps:

  • Saute beef, onion, celery and garlic in a large pan until well done.
  • Strain off fat, leaving meat in the strainer and reserving pan for later use.
  • Boil potatoes until fork tender, about 20 minutes.
  • Drain and mash with butter.
  • Blanch carrots (or microwave until al dente) and add to beef mixture.
  • Whisk broth with flour to thicken, and add to the pan. When gravy comes to a boil, add beef and carrot mixture.
  • Reduce heat and simmer for 5 minutes.
  • Spoon meat mixture into a 2-quart casserole. Spoon potatoes on top.
  • Bake for 20 minutes at 350 degrees.
  • Top with cheese and let sit until cheese melts from the radiated heat; approximately 5 minutes.

1 1/2 lbs ground beef round
1 onion, chopped
1 -2 cup vegetables (chopped carrots, corn, peas)
1 1/2-2 lbs potatoes or 3 big potatoes
8 tablespoons butter
1/2 cup beef broth
1 teaspoon Worcestershire sauce
salt
pepper
seasoning, of choice

Steps:

  • 1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
  • 2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.
  • 3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.
  • 4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
  • 5 Mash potatoes in bowl with remainder of butter, season to taste.
  • 6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
  • 7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.
