SWEET AND SPICY MEATLOAF

Sweet and Spicy Meatloaf image

Provided by Food Network

Categories     main-dish

Time 2h30m

Yield 6 servings

Number Of Ingredients 20

2 tablespoons olive oil
2 green bell peppers, diced small
2 red bell peppers, diced small
1 large yellow onion, diced small
3/4 cup panko breadcrumbs
1/2 cup whole milk
2 heads garlic, roasted and mashed into a paste
2 heads garlic, roasted and mashed into a paste
1 cup ketchup
1/4 cup steak sauce
1/4 cup sriracha
1/4 cup maple syrup
1 tablespoon Montreal steak seasoning
2 pounds 80/20 ground beef
1 pound sweet Italian sausage, casings removed
3 eggs, beaten
1 bunch fresh Italian parsley, chopped
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
  • Preheat the oven to 350 degrees F.
  • Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
  • In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
  • In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
  • When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

SUPER EASY SUPER TASTY MEATLOAF

Make and share this Super Easy Super Tasty Meatloaf recipe from Food.com.

Provided by Cat Loving Cook

Categories     Meat

Time 1h10m

Yield 2 meatloaves, 6-8 serving(s)

Number Of Ingredients 9

2 lbs ground meat, I like to use a mix of ground turkey and ground beef
3/4 cup breadcrumbs, plain
1 medium onion, chopped fine
1/2 cup ketchup
2 eggs
3 tablespoons onion soup mix (one packet)
1/2 cup ketchup
3 tablespoons brown sugar
2 teaspoons mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
  • Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
  • Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
  • Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
  • While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.
  • After 45 minutes, take the meat loaves out and spread the sauce over the tops.
  • Placed the sauced loaves back in the oven and bake for another 15 minutes or until cooked through.
  • Let the meat loaves cool for 5 - 10 minutes before cutting them.
  • Enjoy!
  • P.S. To cook a frozen meatloaf, take the frozen meat loaf out the day before you want to cook it and let it thaw in the refrigerator. Cook as stated above.
  • P.S.S. This meatloaf pairs wonderfully with my super yummy corn casserole!

SPICY, GARLICKY MEATLOAF

Spicy, Garlicky Meatloaf image

This meatloaf is as pungent and zesty as a meatball, but baked in that iconic, sliceable loaf form. A combination of chilies and sage add a spicy, earthy note, and a glaze of tomato paste and olive oil elevates a traditional dish away from its ketchup roots. The pine nuts are a visual cue: this is something a little different. And it tastes great the day after.

  • Seasoning is Key: Don't skimp on the spices and herbs. A good blend of garlic, onion, paprika, cumin, and chili powder will give your meatloaf plenty of flavor.
  • Add Some Crunch: Incorporate some crunchy elements like chopped celery, carrots, or bell peppers into the meatloaf mixture for added texture and flavor.
  • Use Breadcrumbs: Breadcrumbs help to bind the meatloaf together and keep it moist. You can use fresh or dried breadcrumbs, or even crushed crackers or cornflakes.
  • Don't Overmix: Overmixing the meatloaf mixture can make it tough. Mix just until the ingredients are combined.
  • Shape It Right: Form the meatloaf mixture into a loaf shape and place it in a baking dish. Make sure the loaf is evenly shaped so that it cooks evenly.
  • Bake at the Right Temperature: Bake the meatloaf at 350°F for about 1 hour, or until a meat thermometer inserted into the center reads 160°F.
