EASY TAMALE CASSEROLE

My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

6 to 8 green pork tamales (Oaxaca style), husks removed

Tips:

  • Choose Fresh Ingredients: Use fresh, high-quality ingredients for the best flavor and texture. Fresh corn is ideal, but frozen or canned corn can also be used.
  • Soaking the Corn Husks: Soaking the corn husks in warm water for at least 30 minutes softens them and makes them easier to work with. This step is especially important if using dried corn husks.
  • Seasoning the Meat Filling: Season the meat filling generously with your favorite Mexican spices. Chili powder, cumin, garlic powder, and oregano are all great options.
  • Layering the Tamales: When layering the tamales, place a spoonful of the meat filling in the center of each corn husk. Top with a spoonful of masa dough, spreading it evenly over the meat. Fold the sides of the corn husk over the filling, then fold the top and bottom flaps inward to create a sealed package.
  • Steaming the Tamales: Steam the tamales for at least 1 hour, or until the masa dough is cooked through. You can use a traditional steamer, a large pot with a steamer basket, or even a slow cooker.
  • Serving the Tamales: Serve the tamales hot, with your favorite toppings such as salsa, guacamole, sour cream, or shredded cheese.

Conclusion:

Tamales are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With a little planning and effort, you can easily make tamales at home. So next time you're looking for a special meal to share with your family and friends, give this tamale casserole recipe a try. You won't be disappointed!
