EASY AND QUICK VEGETARIAN CHILI

Easy and Quick Vegetarian Chili image

This is a fast recipe to put together that uses ingredients that most of us keep on hand. It's a very forgiving recipe in that you can easily add or change ingredients and it will still be a very healthy and flavorful dish! I have used the leftovers in tacos or as a topping for tamales.

Categories     Beans

Time 25m

Yield 2-4 serving(s)

Number Of Ingredients 11

1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup corn (optional)
1 (15 ounce) can black beans, rinse & drain
1 (15 ounce) can ranch style beans, undrained
1 (15 ounce) can tomato sauce
1 (1 ounce) package chili seasoning mix (mild or hot)
1/2 cup water (or more)
sour cream (optional)
grated cheese (optional)

Steps:

  • Heat olive oil in a pot and cook onion and bell pepper until soft.
  • Add all other ingredients except those for topping.
  • Mix well.
  • Simmer for 15 minutes to an hour to blend flavors, adding water if necessary.
  • This may also be cooked in a crockpot.

Tips:

  • Use a variety of beans: Different beans have different flavors and textures, so using a mix will give your vegetarian chili a complex and hearty flavor. Good options include black beans, kidney beans, pinto beans, and chickpeas.
  • Don't be afraid to add some heat: Chili is a naturally spicy dish, but you can adjust the heat level to your liking. If you want a mild chili, use mild chili peppers or omit them altogether. If you like a spicy chili, use hot chili peppers or add a teaspoon or two of cayenne pepper.
  • Add some sweetness: A little bit of sweetness can help balance out the heat of the chili. Good options for adding sweetness include corn, carrots, or a tablespoon or two of brown sugar.
  • Garnish your chili with your favorite toppings: There are many different toppings that you can add to your chili to make it even more delicious. Some popular options include shredded cheese, sour cream, diced avocado, chopped cilantro, and crushed tortilla chips.

Conclusion:

Vegetarian chili is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to get your daily dose of vegetables, and it's also a good source of protein and fiber. Whether you're looking for a quick and easy meal or a hearty and satisfying soup, vegetarian chili is a great option.
