SOUPA AVGOLEMONO (EGG-LEMON SOUP)

Soupa Avgolemono (Egg-Lemon Soup) image

This tasty soup is very popular in Greece and Cyprus. I remember my father making it on chilly winter days, especially when there were colds and flu in the household! Sometimes he would add chopped, cooked chicken to the soup, and other times he would serve it plain. This is a taste of my childhood.

GREEK CHICKEN & RICE SOUP WITH EGG & LEMON (AVGOLEMONO) RECIPE - (3.9/5)

Greek Chicken & Rice Soup with Egg & Lemon (Avgolemono) Recipe - (3.9/5) image

Provided by LRay

Number Of Ingredients 10

1 1/2 pounds chicken breasts, boneless, skinless, trimmed
Salt and pepper
12 (3-inch) strips lemon zest plus 6 tablespoons juice, plus extra juice for seasoning (3 lemons)
2 sprigs fresh dill, plus 2 teaspoons chopped
2 teaspoons coriander seeds
1 teaspoon black peppercorns
1 garlic clove, peeled and smashed
8 cups chicken broth
1 cup long-grain rice
2 large eggs plus 2 large yolks

Steps:

  • If you have homemade chicken broth such as our Classic Chicken Broth, we recommend using it in this recipe, as it gives the soup the best flavor and body. Our preferred commercial chicken broth is Swanson Chicken Stock. Use a vegetable peeler to remove strips of zest from the lemons. Cut each chicken breast in half lengthwise. Toss with 1 3/4 teaspoons salt and let stand at room temperature for at least 15 minutes or up to 30 minutes. Cut 8-inch square of triple-thickness cheesecloth. Place lemon zest, dill sprigs, coriander seeds, peppercorns, and garlic in center of cheesecloth and tie into bundle with kitchen twine. Bring broth, rice, and spice bundle to boil in large saucepan over high heat. Reduce heat to low, cover, and cook for 5 minutes. Turn off heat, add chicken, cover, and let stand for 15 minutes. Transfer chicken to large plate and discard spice bundle. Using two forks, shred chicken into bite-size pieces. Using ladle, transfer 1 cup cooked rice to blender (leave any liquid in pot). Add lemon juice and eggs and yolks to blender and process until smooth, about 1 minute. Return chicken and any accumulated juices to pot. Return soup to simmer over high heat. Remove pot from heat and stir in egg mixture until fully incorporated. Stir in chopped dill and season with salt, pepper, and extra lemon juice to taste. Serve.

Time 30m

Yield 6 servings

Number Of Ingredients 4

2 quarts chicken broth
2/3 cup orzo
3 eggs
Juice of 1 1/2 lemons

Steps:

  • Bring the chicken broth to a boil in a saucepan. Stir in the orzo, reduce the heat and simmer, uncovered, for about 10 to 12 minutes, or until pasta is done. Turn off the heat, keeping the pan in its place.
  • Separate the eggs, and place the egg whites in a clean bowl and beat just until foamy, about 2 to 3 minutes. Add the egg yolks and continue beating until well mixed, another 2 minutes. Continuing to beat, gradually add the lemon juice. Slowly add about 3 cups of the hot chicken broth (at this point, use a thermometer to make sure the broth is just below 160 degrees F), beating as you add the broth in a very thin stream.
  • Using a wooden spoon or large fork, vigorously stir the orzo and remaining hot broth in an S pattern. Then quickly pour all of the egg lemon mixture into the saucepan while stirring. Keep the pan warm over very low heat, and stir in an S pattern until the soup thickens slightly and the froth is broken down. Serve hot.

QUICK VEGETARIAN EGG-LEMON SOUP WITH BROWN RICE

Quick Vegetarian Egg-Lemon Soup with Brown Rice image

I hesitate to call this vegetarian egg-lemon soup avgolemono because purists will insist that soup must contain chicken, and this one does not. This incredibly simple, wonderfully quick, and surprisingly nutritious recipe is perfect to make on cold, wet weeknights. My 7-year-old loves this very lemony, creamy soup, and so do I. If you want a thicker soup, add another half-cup of rice. If you aren't vegetarian, you can saute a few shrimp to add to your bowl.

1 (3 pound) free range chicken
12 cups cold water
3 tablespoons kosher salt
1 leek, cleaned and quartered
1 carrot, peeled and quartered
2 bay leaves
3 tablespoons extra-virgin olive oil
2 cups finely diced onion (about 1 medium onion)
2/3 cup arborio rice
1/2 cup fresh lemon juice
2 large eggs
1 teaspoon freshly ground pepper

Steps:

  • In a 6 to 8-quart stockpot, combine the chicken, water, and 2 tablespoons salt. Bring to a boil over medium-high heat; immediately reduce the heat to a very low simmer, and skim the foam from the surface. Add the leek, carrot, and bay leaves and continue to simmer with the chicken until the chicken is thoroughly cooked, about 45 minutes to 1 hour.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring, until translucent, about 6 minutes. Remove from the heat and set aside.
  • Remove chicken from the broth, and allow meat to cool. Strain the broth and skim the fat. (Place the broth in the refrigerator to make it easier to skim.)

  • Return the broth to high heat, add the rice and onion and bring to a boil. Reduce the heat and simmer until the rice is almost cooked through, about 20 minutes. Add the chicken and reduce the broth to a low simmer.
  • In a medium sized bowl, beat the lemon juice, eggs, and pepper. Ladle 2 cups of hot broth into a measuring cup with a pourable spout. BEID BI LAMOUN (EGG AND LEMON SOUP)

Beid Bi Lamoun (Egg and Lemon Soup) image

This is a great favorite all over the Middle East. It is the Greek avgolemono. Egg yolks alone or whole eggs are used as a thickening for this very lemony soup.

Provided by Mirj2338

Categories     Poultry

Time 30m

Yield 6 serving(s)

Number Of Ingredients 7

7 1/2 cups chicken stock (see below)
salt
white pepper
1/3 cup rice, washed,or 1/3 cup italian pastina,or 1/4 cup tapioca
3 egg yolks or 2 whole eggs
1 -2 lemon, juice of
2 teaspoons finely chopped parsley (optional) or 2 teaspoons finely chopped chives (optional)

Steps:

  • Make a rich chicken stock with leftover chicken bones or giblets.
  • If it is not strong enough, add a stock cube.
  • Season with salt and pepper.
  • Add the rice, pastina, or tapioca to the boiling stock and simmer until tender.
  • Beat the egg yolks or whole eggs and add the lemon juice, beating constantly.
  • Add a ladleful of the soup to the egg mixture and beat well.
  • Pour this back into the pan slowly, still beating constantly.
  • Keep the heat under the pan very low, and cook the soup gently, stirring all the time, until it thickens.
  • On no account allow it to boil, or the eggs will curdle.
  • Taste and adjust seasoning, adding more lemon juice if necessary.
  • Garnish, if you like, with chopped parsley or chives, and serve immediately.

Tips:

  • Use fresh lemons: Freshly squeezed lemon juice adds a bright, tangy flavor to the soup. Bottled lemon juice can be used, but it won't have the same flavor.
  • Don't overcook the eggs: The eggs should be cooked just until they are set. Overcooked eggs will become tough and rubbery.
  • Serve immediately: Egg-lemon soup is best served immediately after it is made. The soup will thicken as it cools, so it's important to serve it while it is still hot.
  • Garnish with fresh herbs: Fresh herbs, such as parsley, dill, or cilantro, can add a pop of color and flavor to the soup.
  • Add a touch of spice: A pinch of cayenne pepper or red pepper flakes can add a bit of heat to the soup. Alternatively, you could add a bay leaf or grated nutmeg.

Conclusion:

Egg-lemon soup is a delicious and easy-to-make soup that is perfect for a light lunch or dinner. It is also a good source of protein, vitamins, and minerals. With a few simple tips, you can make a delicious and flavorful egg-lemon soup that your family and friends will love.
