I found this recipe in the newspaper twenty years ago. I was impressed by the author's stories about life in the homefront during WWII so I decided to try this recipe. It was very good even without the allspice.

1 1/4 cups flour
3 teaspoons cornstarch
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon salt
1 cup brown sugar
1/3 cup oil
1 teaspoon lemon juice
1 teaspoon vanilla
1 cup water (approximately)

Steps:

  • Stir together flour, cornstarch, baking soda, spices and salt.
  • Cream sugar, oil, lemon juice and vanilla.
  • Add flour mixture to sugar mixture, a little at a time, alternating with up to 1 cup of water.
  • Mix briskly with fork until thoroughly blended.
  • Pour into lightly greased and floured 8 or 9 inch square pan and bake at 350 degrees for 30 minutes or until cake tests done.
  • Let cool in pan.

3 c all purpose flour
1 c sugar
3 tsp baking power
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice, ground
1 tsp mace,or nutmeg can be used.if using nutmeg, use 3/4 tsp.
1 tsp clove, ground
1/2 c liquid fat (oil)
1 1/4 c water
1 Tbsp pure vanilla extract

Steps:

  • 1. 1. Sift together all dry ingredients.
  • 2. 2.Add liquid fat with water and vanilla and stir until well mixed.
  • 3. 3.Bake in layers in a moderately hot oven-375 degrees for 20 minutes.Or in a loaf pan in a moderate oven (350 degrees) for 45 minutes. 9 x 9 inch pan for 30 minutes at 350 degrees.
  • 4. Note: This recipe can be easily doubled, and put in a 9x13 inch cake pan. Bake at 350 degrees for 30 to 40 minutes. Check at 35 minutes using a toothpick.If your toothpick comes out clean, remove from the oven. If not, bake for another 5 to 10 minutes.
  • 5. Frost, but we like it plain. Opt. I have tried this with 3 mashed bananas added, and it's Great! You may add chocolate chips with the bananas as well. This is a heavy moist, wonderful Spice cake. You may need to increase baking time to 45 minutes when adding the bananas.

6T melted margarine
1 1/2 C sugar
1/2t salt
1 1/2 C milk
8 oz whole cranberry sauce

  • In bowl stir flour, sugar, baking soda, spices, and salt until well blended. Combine milk and margarine. Stir alternately with cranberry sauce into dry ingredients just until well blended.
