Steps:

Like so many of his dishes, it is at once elegant and easy, and no trouble to put together on a weeknight. Sauté the sliced eggplant and zucchini until golden while you make a quick sauce of canned crushed tomatoes, olive oil, garlic and herbs in another pot. Throw everything together, and simmer for about 15 minutes. Toss with cooked pasta and a shower of Parmesan. Dig in.

4 tablespoons olive oil
1 tablespoon finely chopped garlic
1 28-ounce can crushed tomatoes
4 tablespoons chopped fresh Italian parsley
2 tablespoons dried oregano
1/8 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
1 pound eggplant
1/2 pound zucchini
3/4 pound dry pasta, like ziti, fusilli, shells or rigatoni
4 tablespoons coarsely chopped fresh basil
4 tablespoons grated Parmesan cheese

Steps:

  • Heat 1 tablespoon of the olive oil in a saucepan and add the garlic. Cook and stir without browning. Add the tomatoes, parsley, oregano, pepper flakes, salt and pepper. Stir to blend, bring to a boil and simmer for 15 minutes.
  • Meanwhile cut off the ends of the eggplant and peel. Cut it into 1-inch cubes.
  • Cut the ends off the zucchini and slice into 1-inch thick slices.
  • Heat the remaining olive oil in a large skillet. When the oil is very hot, add the eggplant, zucchini, salt and pepper. Cook, tossing, until nicely browned and tender. Add to the tomato sauce. Mix well and cook for 15 minutes.
  • Drop the pasta into salted boiling water and cook to the desired degree of doneness. Drain and reserve 1/2 cup of the cooking liquid.
  • Return the pasta to the pot, add the reserved cooking liquid, the vegetable and sauce mixture, basil and Parmesan cheese. Toss and serve hot.

4 crosswise slices eggplants, 1/2 inch thick, peeled
1 egg
1 egg white
1 tablespoon water
1/2 cup plain breadcrumbs
2 tablespoons parsley
1 tablespoon grated parmesan cheese
3/4 teaspoon italian seasoning
2 (4 ounce) chicken breasts
2 teaspoons olive oil
2/3 cup marinara sauce, warmed (I used Marinara Sauce / Spaghetti Sauce Via Bari, Italy.)

Steps:

  • Preheat oven to 425 degrees, spray a baking sheet with cooking spray.
  • In a pie plate, whisk together the egg, egg white and water. In a second pie plate stir together the bread crumbs, parsley, cheese and Italian seasoning.
  • Dip the cut eggplant in the egg wash and then in bread crumbs, place on prepared baking sheet and lightly spray with cooking spray. Place in preheated oven and bake for 10 minutes, turn and spray second side lightly with cooking spray. Return to oven and bake and additional 10 minutes or until done.
  • While eggplant slices are baking, place the chicken breasts in a resealable bag with a teaspoon of water. Pound with a meat mallet to 1/4 inch thick.
  • Dip the chicken into the remaining egg wash and then in bread crumbs. Allow crumb mixture to set for a few minutes while oil heats.
  • Over medium heat add olive oil to a heavy skillet and warm. When warm place the chicken in the pan and cook 4 minutes or until lightly browned, turn and cook other side for 4 minutes.
  • To assemble, place 2 slices of eggplant on each plate, spoon a portion of sauce over all, top with chicken breast and remaining sauce. Grate freshly grated Parmesan cheese over all and serve.

1 lb chicken cutlet
1 egg
1 1/4 cups seasoned bread crumbs
1/4 cup chopped fresh parsley
1/2 cup grated parmesan cheese
1 1/2 cups marinara sauce

Steps:

  • Pre-heat oven to 400 degrees.
  • Spray baking pan with veg. oil.
  • Peel and slice eggplant 1/4".
  • Combine bread crumbs, parsley, parmesan cheese, salt and pepper.
  • Dip eggplant into egg then crumb mixture.
  • Place on baking sheet drizzle with olive oil and bake for 25 minutes.
  • While the eggplant is cooking make some pasta and cook the cutlets in a skillet w/olive oil. Dip in the egg/crumb mixture. before frying.
  • Place cutlets on cooked eggplant, spoon sauce over and top with shredded mozzarella and bake 10 to 15 minutes longer.

16 ounces boneless chicken breasts (or 4 breasts)
8 slices eggplants (1/2 inch slices)
8 slices zucchini (1/2 inch slices)
3 beefsteak tomatoes, diced or 24 ounces thick & chunky salsa
1 cup panko breadcrumbs
16 ounces shredded fat free mozzarella cheese
2 tablespoons fat-free parmesan cheese
1/2 teaspoon minced roasted garlic
1 teaspoon paprika

Steps:

  • Slice chicken breasts in half so they are thin. Get 8 pieces to grill.
  • Grill chicken, eggplant and zucchini until tender (I use my George Foreman grill).
  • Preheat oven to 350°F.
  • Spray a 9x13-inch baking dish with a nonstick spray.
  • Layer chicken, eggplant, and zucchini horizontally or sideways covering the bottom of the baking dish.
  • Add garlic and paprika to the tomatoes or salsa and pour over the layers of chicken and vegetables.

4 small purple eggplants, cut into 1 1/2-inch cubes
1 pinch salt and freshly ground pepper to taste
5 Roma (plum) tomatoes, or more to taste, cut into 1 1/2-inch cubes

1 large yellow onion, cut into 1 1/2-inch cubes
5 cloves garlic, or more to taste, peeled
2 tablespoons olive oil, or to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Put eggplant cubes in a colander set over a bowl. Sprinkle salt liberally over the eggplant cubes; let sit to drain for 30 minutes.

I don't like mushy eggplant so had to develop my own recipe. I've checked in Zaar and although there are some close to mine, there is just enough difference to make it worthwhile posting. When I'm having spaghetti, I always make enough sauce and freeze it so that I can have eggplant the following week or so. I don't peel eggplant but that's your choice.

2 medium eggplants (or 3-4 Chinese eggplants)
salt
1/4 cup oil (vegetable or canola)
1 cup all-purpose flour
4 eggs, more if needed (beaten)
2 cups breadcrumbs (Italian flavor or flavor your own)
3 cups mozzarella cheese (shredded)
1/2 cup parmesan cheese (grated)
2 cups pasta sauce (make your own or purchase)

Steps:

  • Wash eggplant, dry, trim ends.
  • Slice to 1/4 inch rounds.
  • Sprinkle salt on both sides.
  • Spread out in strainer over sink, or in bowl for 1 hour to drain moisture.
  • Rinse well and pat dry with paper towels.
  • Put flour in flat dish, eggs in bowl, breadcrumbs in separate flat dish.
  • Coat both sides of slices in flour.
  • Dip in egg.
  • Coat in breadcrumbs.
  • Stack in separate dish.
  • Heat oil in pan.
  • Brown slices in oil a few at a time, may have to change oil if it gets too brown.
  • Drain on papertowels (I just do this in layers).
  • In a 9x13 baking dish, spread a couple of tablespoons of sauce on the bottom.
  • Place a layer of eggplant (can be overlapped), spread sauce, sprinkle with mozzarella and parmesan.
  • Repeat layers till done. Takes me three layers, so divide all items in three.
  • Bake at 350 for 30-35 minutes until cheese melts.

2 large onions (about 1 pound)
1 garlic clove
about 1/2 cup olive oil
a 26- to 32-ounce container chopped tomatoes
1 tablespoon finely chopped fresh sage leaves
1 1/2 teaspoons finely chopped fresh thyme leaves
2 large eggplants (about 2 1/2 pounds total)
4 large zucchini (about 1 3/4 pounds total)
4 large red bell peppers
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
3 large eggs
6 ounces freshly grated Parmigiano-Reggiano (about 2 cups)

Steps:

  • Halve onions through root end and thinly slice. Finely chop garlic. In a large heavy skillet cook onions with salt to taste in 2 tablespoons oil, covered, over moderately low heat, stirring occasionally, until soft, about 15 minutes. Add garlic and cook mixture, uncovered, stirring occasionally, until any liquid onions give off is evaporated. Add tomatoes with juice, sage, and thyme and simmer, stirring occasionally, until excess liquid is evaporated and mixture is very thick. Season mixture with salt and pepper and cool. Preheat oven to 450°F. Brush at least 2 shallow baking pans with some remaining oil.
  • Cut eggplants crosswise into 1/3-inch-thick rounds and arrange in one layer in baking pans. Brush eggplant slices with some remaining oil and roast in upper and lower thirds of oven, switching position of pans halfway through roasting time, until tender and golden, about 20 minutes. Cool eggplant 5 minutes and transfer with a slotted spatula to paper towels to drain.
  • Cut zucchini lengthwise into 1/3-inch-thick slices and roast in same manner until tender and pale golden, about 25 minutes. Cool zucchini 5 minutes and transfer to paper towels to drain.
  • Quarter bell peppers lengthwise and discard stems, seeds, and ribs. Arrange peppers, skin sides up, in oiled baking pans and brush with some remaining oil. Roast peppers in same manner until tender and lightly browned, about 20 minutes. Cool peppers 5 minutes and transfer to paper towels to drain.
  • In a 1 1/2- to 2-quart heavy saucepan melt butter over moderately low heat and whisk in flour. Cook roux, whisking, 3 minutes and whisk in milk and cream. Bring mixture to a boil, whisking, and simmer, whisking occasionally, 2 minutes. Remove pan from heat and cool sauce 5 minutes. Whisk in eggs, two thirds Parmigiano-Reggiano, and salt and pepper to taste.
  • Preheat oven to 400°F. and lightly oil a 14- x 10- x 2 1/2-inch or other 3 1/2-quart shallow baking dish. In baking dish arrange half of eggplant, overlapping slices to form an even layer, and season with salt and pepper. Top eggplant with half of tomato mixture, spreading evenly, and pour about one third Parmigiano-Reggiano custard over it. Nestle half of zucchini in custard and season with salt and pepper. Top zucchini with half of peppers. Repeat layering, reserving half of remaining custard for topping. Pour reserved custard over final layer of peppers and sprinkle with remaining grated Parmigiano-Reggiano.
  • Bake torte in middle of oven until custard is puffed and golden brown, about 35 minutes. Let torte stand 10 minutes before serving.
