Time 1h15m

Yield 4 servings

Number Of Ingredients 13

1 quart low-sodium beef stock
Four 6 to 8-ounce filet mignons
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
4 tablespoons butter
2 tablespoons extra-virgin olive oil
3 cups thinly sliced cremini mushrooms
2 shallots, sliced
4 cloves garlic, minced
1/2 cup brandy
1/2 cup dry red wine
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce

Steps:

  • Pairs well with: cabernet
  • Add the beef stock to a saucepan and reduce over medium-high heat to 1/2 cup, about 1 hour.
  • Sprinkle the steaks on both sides with the salt and pepper. In a large skillet or cast-iron pan over medium-high heat, heat 2 tablespoons of the butter and the olive oil. When the butter has melted and the oil shimmers, add the steaks. Brown the steaks on both sides, 3 minutes per side. Transfer the steaks to a plate and set aside, lightly covered with foil.
  • Add the mushrooms and shallots to the pan and cook for 2 minutes, stirring frequently, adding oil if needed. Add the garlic. When the garlic is lightly colored, add the brandy (be careful, it can ignite). Add the wine, mustard, Worcestershire and the reduced beef stock. Simmer for 2 to 3 minutes more. Return the steaks to the pan and finish cooking them to the desired temperature, 2 to 4 minutes, depending upon the size of the filets and desired temperature/doneness. For medium-rare, cook to 135 degrees F on an instant-read thermometer. Add the remaining 2 tablespoons butter to the sauce to melt.
  • To serve, place a steak on each plate and pour the sauce over the steak.

ELEGANT STEAK DIONNE

Elegant Steak Dionne image

A fantastic no-fuss meal that you can make to serve same-day, or you can freeze it ahead to be served later. Easy preparation, but perfect for entertaining or a delicious family meal. To save even more time, I use the pre-sliced fresh mushrooms. Cooking in the crockpot makes it so simple. From the cookbook Don't Panic More Dinner's in the Freezer.

Categories     Meat

Time 5h15m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 1/2-2 lbs sirloin, fat trimmed (or beef tenderloin)
2 cups fresh mushrooms, thinly sliced
1 small white onion, chopped
3 garlic cloves, crushed
1 1/2 teaspoons lemon juice
3 tablespoons Worcestershire sauce
1/4 cup soy sauce
1 tablespoon brown sugar or 1 tablespoon honey
1/4 cup butter, melted
1/4 teaspoon dried oregano
3/4 cup red wine

Steps:

  • Cooking day:.Place the meat in a large freezer bag.
  • In a separate bowl, mix together remaining ingredients and pour over meat.
  • If freezing, place freezer bag into freezer, keeping as flat as possible.
  • Serving day:.Thaw steak.
  • Place meat and marinade into crockpot. Simmer on low for about 5-6 hours or until tender.
  • Remove meat and thinly slice. Place meat on a serving platter; pour juices from crockpot over meat and serve.
  • This is great served over noodles, rice, or garlic mashed potatoes. The wine dissipates while cooking but tenderizes the meat and gives it a wonderful, rich flavor.

Tips:

  • For the best results, use high-quality ingredients. This means choosing a well-marbled steak, such as a ribeye or strip steak, and using fresh herbs and spices.
  • Make sure the steak is cooked to your liking. The internal temperature of the steak should be 125°F for rare, 135°F for medium-rare, 145°F for medium, 155°F for medium-well, and 165°F for well done.
  • Let the steak rest for a few minutes before slicing it. This will allow the juices to redistribute throughout the steak, resulting in a more tender and flavorful steak.
  • Serve the steak with your favorite sides, such as mashed potatoes, asparagus, or a salad.

Conclusion:

Steak Diane is a classic French dish that is perfect for a special occasion. It is a flavorful and elegant dish that is sure to impress your guests. With a little bit of planning and preparation, you can easily make this dish at home. So next time you are looking for a special meal to cook, give Steak Diane a try.
