FRIED CHICKEN

Categories     main-dish

Time 5h30m

Yield 8 servings

Number Of Ingredients 17

1 quart buttermilk
1/2 cup Emeril's Original Essence, divided, recipe follows
2 tablespoons salt
2 tablespoons sugar
1 head garlic, cloves peeled and crushed
2 (3 1/2 to 4-pound) chickens, cut into 8 pieces each
4 cups all-purpose flour
2 tablespoons cayenne pepper
Peanut oil, for frying
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Combine the buttermilk, 1/4 cup Essence, salt, sugar, and garlic in a large nonreactive bowl. Stir to blend. Immerse the chicken in the mixture and refrigerate for at least 4 hours and for up to 24 hours.
  • Combine the flour, the remaining 1/4 cup Essence, and the cayenne in a large doubled brown paper bag or plastic freezer bag and shake to blend. Drop the chicken, a few pieces at a time, into the flour mixture and shake thoroughly to completely coat. Remove the chicken and shake off the excess flour. Repeat the coating process with the remaining chicken pieces. Place the coated chicken on a large wire rack set over a sheet pan and let rest until ready to fry, at least 20 minutes.
  • Heat 4 inches of oil to 300 degrees F over medium-high heat in a medium Dutch oven or heavy pot. Fry the chicken in batches, skin side down, until golden brown, about 10 minutes. Turn and fry until golden brown on the second side, 8 to 10 minutes longer. Remove the chicken and drain on paper towels. (Note: An even oil temperature is the key to success; a clip-on candy/deep-fry thermometer should be kept in the pot at all times. And the temperature should remain between 280 degrees F and 300 degrees F at all times.) Allow the chicken to rest at least 5 minutes before serving.
  • Combine all ingredients thoroughly.

ELLEN'S CHICKEN CACCIATORE

Ellen's Chicken Cacciatore image

This recipe takes just 15 minutes to prepare and 50 minutes of cooking time, but tastes like it took a lot longer. The recipe calls for chicken thighs because the meat is more tender than chicken breasts. You can use chicken breast if you prefer.

This chicken recipe is from a cookbook a group I belong to (Ellen submited this one) put out to raise money - it was a huge success and I get inspiration from it weekly. This is by far my families favorite - the smell while its cooking is unbelievably good! I generally use skinless chicken thighs. Hope you love it as much as we do.

ELLEN'S FAMOUS CHICKEN SALAD

Ellen's Famous Chicken Salad image

This is an outstanding chicken salad recipe. It makes delicious sandwiches for afternoon tea parties - have copies of the recipe on hand! The recipe comes from "Swe-e-e-et Tea & Magnolias" by Ellen Powell. Note: Salad cubes are produced in North Carolina by the Mt. Olive Pickle Company. The product is available in grocery stores throughout the southeastern United States. Finely diced pickles are a decent substitution, however.

Tips:

  • Brine the chicken: Brining the chicken in a mixture of salt, water, and spices helps to keep the meat moist and flavorful. Brine the chicken for at least 4 hours, or overnight.
  • Use a buttermilk marinade: Buttermilk is a great marinade for chicken because it helps to tenderize the meat and adds a delicious flavor. Marinate the chicken in buttermilk for at least 30 minutes.
  • Dredge the chicken in flour: Dredging the chicken in flour helps to create a crispy coating. Make sure to coat the chicken evenly in flour.
  • Use a combination of oils for frying: Using a combination of oils, such as vegetable oil and butter, helps to create a crispy and flavorful coating. Heat the oil to the correct temperature before frying the chicken.
  • Fry the chicken in batches: Don't overcrowd the pan when frying the chicken. Fry the chicken in batches to ensure that it cooks evenly.
  • Don't overcook the chicken: Overcooked chicken is dry and tough. Cook the chicken until it is golden brown and crispy, but still juicy on the inside.

Ellen's Fried Chicken is a delicious and easy-to-make recipe that is perfect for any occasion. By following these tips, you can make sure that your fried chicken turns out crispy, flavorful, and juicy. So what are you waiting for? Give this recipe a try today!
