POTATO SALAD BY EMERIL
My mom and I make regular potato salad just alike even though we don't have a written down recipe. My husband really likes mine and so he doesn't think of this as potato salad, but a potato dish. It is great served warm just after you make it.

Steps:
- When boiling the potatoes I did not peel them. When I cubed them I did take out the peeling that was just hanging, but didn't worry if some got into the salad.
- Place sliced potatoes and eggs in serving dish.
- Sprinkle celery and onion on potatoes.
- Mix up ranch dressing and salt and pour over potatoes mixture.
- Mix gently.
- Garnish with parsley and bacon.
- Serve immediately or keep warm.

Steps:
- Preheat the oven to 350 degrees F. Toss the potatoes with a drizzle of olive oil, salt, and pepper. Spread on a sheet pan and roast until tender and golden brown, about 40 minutes. Shake the pan halfway through cooking so the potatoes cook evenly.
- Place the onion on a large piece of aluminum foil. Drizzle the onion with olive oil and season with salt and pepper. Wrap the onion tightly in the foil and roast until tender and lightly golden brown, about 50 minutes to 1 hour. Cool slightly. When cool enough to handle, chop and set aside.
- In a small bowl, whisk together the lime juice and macadamia oil. Combine the potatoes and onions in a large bowl. Add the lime juice mixture and toss well. Season, to taste, with salt and pepper.

SMASHED POTATO SALAD
Steps:
- In a saucepan, cover the potatoes with water. Bring to a boil and cook until the potatoes are tender. Drain and place in a mixing bowl. Smash the potatoes with a potato masher. Add scallions, red onion, mayonnaise, and cider vinegar. Season, to taste, with salt and pepper.
Tips:
- Use a variety of potatoes: Baby potatoes, Yukon Golds, and red potatoes all make great potato salad.
- Cook the potatoes properly: For a creamy salad, boil the potatoes until they are just tender. For a firmer salad, boil them for a few minutes less.
- Use a flavorful dressing: A good potato salad dressing should be creamy, tangy, and flavorful. Use a combination of mayonnaise, sour cream, mustard, and vinegar or lemon juice.
- Add your favorite mix-ins: Chopped celery, onion, pickles, hard-boiled eggs, and bacon are all popular additions to potato salad.
- Chill the salad before serving: Potato salad is best when it is served cold. Chill it for at least 30 minutes before serving.
