2 pounds cubed beef stew meat
¼ cup all-purpose flour
1 (14 ounce) can beef broth
1 cup beer
1 onion, sliced into thin rings
2 cloves garlic, minced
1 tablespoon packed brown sugar
1 teaspoon dried thyme
1 bay leaf
1 (15 ounce) can mixed vegetables, drained

Steps:

  • Preheat oven to 350 degrees (175 C).
  • In Dutch oven over medium-high heat, melt butter or margarine. Cook beef in two batches until browned, stirring often. Remove beef from Dutch oven and set aside. Stir in flour.

1 teaspoon sugar
1/4 cup flour
1 quart beef broth
1/4 teaspoon thyme
1 teaspoon salt
1/4 teaspoon pepper, chopped
1 teaspoon garlic, minced
1 cup celery, chopped
4 medium potatoes, diced
1/2 cup carrot, diced
1 onion, chopped
1 cup green beans
1 cup English pea

Steps:

  • Brown beef over medium heat. Sprinkle with sugar; cook until well browned. (The sugar adds to the browning process.).

Unbleached all-purpose flour, for dusting
3 tablespoons extra-virgin olive oil
1 red onion, chopped
1 red bell pepper, ribs and seeds removed, chopped
2 tablespoons tomato paste
2 teaspoons berbere seasoning
2 tablespoons Worcestershire sauce
3/4 cup dry red wine, such as Cabernet Sauvignon
3 1/2 cups low-sodium chicken broth
4 carrots (8 ounces), peeled and cut into 1 1/2-inch pieces
1 can (15.5 ounces) chickpeas, drained and rinsed
Fresh mint leaves, for serving
Cooked couscous, warmed, for serving
