4 large or 6 small heads Belgian endive, cored
Garlic and Herb Vinaigrette, recipe follows

Salt, for seasoning
Pepper, for seasoning

Allow to cool, then slip the skins from the beets, trim the ends, and cut into 1/2-inch cubes. Set aside.
  • Quarter the endives lengthwise, then slice crosswise into 1/2-inch thick moons. Combine the beets and endive in a salad bowl and toss with the vinaigrette. Season with additional salt and pepper, if necessary. Serve immediately.
  • In a small glass bowl, melt the salt in the vinegar, then add the pepper, shallot, garlic, mustard, and herbs and combine well. Whisk in the olive oil in slow, steady stream until the dressing is thickened. Alternately, place all ingredients in a glass jar, close the lid, and shake vigorously.

Tips:

  • Use fresh, high-quality ingredients: Fresh beets have a sweet and earthy flavor, while stale beets can be bitter and bland. Look for beets that are firm and smooth, with no cuts or bruises. Fresh cilantro and red onion will also add brightness and flavor to the salad.
  • Roast the beets before using them: Roasting the beets concentrates their flavor and makes them tender. You can roast the beets whole or cut them into wedges. Toss the beets with olive oil, salt, and pepper before roasting.
  • Make the dressing ahead of time: The dressing for this salad can be made up to 3 days in advance. This will allow the flavors to meld and develop. When you're ready to serve the salad, simply whisk the dressing until it is smooth.
  • Serve the salad immediately: This salad is best served immediately after it is made. The beets will start to lose their color and flavor if they sit for too long.

Conclusion:

This beet salad is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its vibrant colors and refreshing flavor, this salad is sure to be a hit at your next gathering.
