1 cup water (70° to 80°)
1/4 cup butter, cubed
1 large egg
1-1/4 teaspoons salt
3-1/4 cups bread flour
1/4 cup sugar
3 tablespoons nonfat dry milk powder
1 package (1/4 ounce) quick-rise yeast
EGG WASH:
1 large egg
4 teaspoons water

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Divide and shape into 24 balls. Roll each into an 8-in. rope; tie into a loose knot. Tuck ends under., Place 1-1/2 in. apart on greased baking sheets. Cover with a kitchen towel; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 400°., For egg wash, in a small bowl, whisk egg and water; brush over rolls. Bake 8-9 minutes or until golden brown. Remove from pans to wire racks; serve warm.

1 egg
3 ½ cups White Lily® All Purpose Wheat Flour, or more as needed
¼ cup sugar
1 ¼ teaspoons salt
1 (.25 ounce) package active dry yeast
Crisco® Original No-Stick Cooking Spray

Steps:

  • Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
  • Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.

1 egg
3 1/4 cups Gold Medal™ Better for Bread™ flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons bread machine or active dry yeast
Butter or margarine, melted, if desired

Steps:

  • Measure carefully, placing all ingredients except melted butter in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
  • Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)

This is a combination of Noo's Poppy and Sesame Seed Rolls (Recipe #348192), and Brenda's Everything Topping (Recipe #421678). Thanks to the both of them! Of course, I've added my own tweaks. To make these super fluffy, make sure that all of your ingredients and the room you are working in are warm!

1 1/3 cups warm water
1/2 cup butter, softened
1 -2 teaspoon mccormick butter flavor extract
1 1/2 teaspoons garlic salt
1 teaspoon sugar
4 cups all-purpose flour
2 teaspoons dry active yeast
1 egg
1 teaspoon salt
1 -2 teaspoon poppy seed
1 -2 teaspoon sesame seeds
1 -2 teaspoon garlic powder
1 -2 teaspoon onion powder

Steps:

  • Add water, butter, McCormick butter extract, garlic salt, sugar, and flour to the bread machine, in that order.
  • Make a well in the flour, and pour the yeast in the well.
  • Run the bread machine on dough cycle.
  • When dough cycle is completed, divide dough into 12 rolls and place in lightly greased 13 x 9 pan.
  • Beat egg and brush rolls with it.
  • Combine salt, poppy seeds, sesame seeds, garlic powder, and onion powder. Sprinkle over egg-washed rolls.
  • Cover rolls with a dry towel and let rise in a very warm place for 30 minutes.
  • Preheat oven to 375 degrees Fahrenheit.
  • Bake rolls for 25 minutes.
  • Remove rolls from oven and let cool in pan for 5-10 minutes, then remove from pan.
  • TIP: If you will not be eating the rolls right away, transfer the rolls to a large enough bowl to hold them. Place a lid on top and vent it, taking care that no rolls touch the lid. Closing the airflow off while they are warm will make the rolls soggy. Leaving them out in open air will make the rolls crusty. Keeping them in a vented bowl until they are completely cool is very important for obtaining soft rolls! Once the rolls are completely cool, seal the bowl.

1/2 cup milk
4 tablespoons butter
1/4 cup sugar
3 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 package regular active or fast-acting dry yeast (2 1/4 teaspoons)
1 egg
1 egg, beaten
1 tablespoon water
1 tablespoon everything bagel seasoning

Steps:

  • In 1 1/2-quart saucepan, mix 1/2 cup water, the milk, butter and sugar. Heat just to simmering over medium-high heat. Cool until instant-read thermometer inserted in mixture reads 120°F to 130°F. In large bowl, mix flour, salt and yeast. Add water mixture and 1 egg to flour mixture; stir until just combined.
  • Sprinkle flour lightly on work surface. Place dough on floured surface. Knead by folding dough toward you, then with heels of your hands, pushing dough away from you with a short rocking motion. Move dough a quarter turn, and repeat. Continue kneading about 5 minutes, sprinkling surface with more flour if dough starts to stick, until dough is smooth and springy.
  • Spray large bowl with cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in warm place about 1 hour or until dough has doubled in size. Dough is ready if indentation remains when you press your fingertips about 1/2 inch into dough.
  • Spray bottom and sides of 13x9-inch pan with cooking spray. Gently push your fist into dough to deflate it. Divide dough into 32 equal pieces. Shape each piece into a ball; place in pan.
  • Mix beaten egg and 1 tablespoon water; brush dough with egg wash. Sprinkle with seasoning. Lightly spray sheet of plastic wrap with cooking spray; cover pan loosely with plastic wrap, sprayed side down. Let rise in warm place about 40 minutes or until dough has doubled in size. Remove plastic wrap.
  • Move oven rack to low position so top of pan will be in center of oven. Heat oven to 375°F. Bake 15 to 18 minutes or until golden brown. Remove from pan to cooling rack. Serve warm or cooled.
  • Make Ahead: After dough has risen in bowl, cover tightly with foil; refrigerate 4 to 24 hours. Before baking, remove foil and cover loosely with plastic wrap. Let rise in warm place about 2 hours or until dough has doubled in size. If some rising occurred in refrigerator, rising time may be less than 2 hours. Shape and bake as directed.
