CRISPY ITALIAN OVEN CHICKEN

Crispy Italian Oven Chicken image

This crispy chicken is made in the oven without any breading at all; the only ingredients you need are the chicken, a drizzle of oil, and a sprinkling of spices.

Provided by Mary Younkin

Number Of Ingredients 5

2 1/2 - 3 pounds bone-in chicken thighs
1 tablespoon olive oil
1 1/2 teaspoons Italian seasoning (store-bought is fine)
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees. Line a large baking tray or half sheet pan with foil and place all the chicken pieces on it, skin side down. Sprinkle with salt, pepper, and spices and flip each piece skin side up. Drizzle a little oil over the skin on each piece of chicken and rub lightly to coat. Sprinkle again with salt, pepper, and spices.
  • Bake for one hour, until most of the fat has rendered out of the chicken and the skin is golden brown and crisp. Remove from the oven and let rest about 5 minutes before serving. Enjoy!

1 cup all-purpose flour
1 ½ teaspoons salt
1 teaspoon ground black pepper

2 tablespoons olive oil, or as needed
1 pound chicken tenders
2 tablespoons olive oil

Spoon about 1 tablespoon of sauce over each chicken piece; top with a half piece of mozzarella cheese.
  • Bake in the preheated oven until the cheese is melted and bubbly, 8 to 10 minutes.

Categories     Chicken

Time 1h

Yield 2 thighs, 4 serving(s)

Number Of Ingredients 8

8 skinless chicken thighs
2 1/2 cups corn flakes
1/4 cup panko breadcrumbs
1 cup fat-free buttermilk (or low-fat)
1/2 teaspoon italian seasoning
1/2 teaspoon cayenne
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place thighs in a seal tight zip lock bag and pour in buttermilk. Coat, lay flat, and refrigerate 30 minutes-8 hours (your preference and time availability).
  • Preheat oven to 350.
  • In the food processor, combine cornflakes, italian seasoning, salt, and cayenne. Pulse until consistency of panko crumbs.
  • Transfer ingredients to a shallow dish and combine with panko. Mix.
  • Remove chicken one at a time and coat both sides in crumb mixture. Place thigh on baking rack.
  • Repeat with other chicken. When finished discard buttermilk and any left over crumb misture.
  • Bake 30-35 minutes or until crisp, juicy, and cooked through. Juices should run clear.

Tips:

  • To achieve crispy chicken, use a combination of butter and olive oil in a cast iron skillet or heavy-bottomed pan.
  • Pat the chicken dry before cooking to remove excess moisture, resulting in a crispier crust.
  • Season the chicken generously with salt and pepper, ensuring even distribution for maximum flavor.
  • For a golden-brown crust, cook the chicken over medium-high heat, allowing each side to cook undisturbed for optimal browning.
  • Use a meat thermometer to ensure the chicken is cooked thoroughly, reaching an internal temperature of 165°F (74°C).
  • When making the sauce, use ripe tomatoes for a sweeter and more flavorful result.
  • Add a pinch of sugar to balance the acidity of the tomatoes.
  • Simmer the sauce for at least 15 minutes to develop a rich and flavorful sauce.
  • Serve the chicken with a generous amount of sauce, grated Parmesan cheese, and fresh basil for an authentic Italian touch.

Conclusion:

By following these tips and the detailed instructions provided in the recipe, you'll be able to create a delicious and crispy Italian chicken dish that will impress your family and friends.
