DIET SOUP

There are hundreds of variations, but the main point of the soup is to be full and to get lots of natural fiber. Almost anything can be added or removed to your sense of taste - bell peppers, corn, tomato juice ..... Try substituting chicken soup mix for the onion soup mix.

Time 45m

Yield 7 , 7 serving(s)

Number Of Ingredients 15

2 tablespoons olive oil, preferably extra virgin
2 onions, large white chopped or sliced
1 1/2 lbs chicken, boneless skinless diced
1 carrot, large finely chopped
2 garlic cloves, large minced
1 jalapeno pepper, minced with seeds
2 teaspoons thyme or 2 teaspoons oregano, finely minced
8 cups chicken broth, fat-free
1 (15 ounce) can black beans, drained
6 cups baby spinach leaves, packed
1 tomatoes, large finely diced
salt, to taste
pepper, to taste
7 tablespoons parmesan cheese, grated
lemon wedge (optional)

Steps:

  • Heat oil in a large stockpot over med. heat. Add onions and cook 10 minutes, stirring occasionally.
  • Add chicken and cook for 5 minutes (or until chicken is cooked through and onions are lightly browned), stirring occasionally.
  • Add carrot, garlic, jalapeno and thyme or oregano. Cook another 2 minutes.
  • Stir in broth and increase heat to high. Bring to a boil. Add beans, spinach and tomato. Bring back to a boil.
  • Turn off the heat and add salt and pepper to taste.
  • Sprinkle each serving with 1 T parmesan cheese. If desired add a squirt of lemon.
  • NOTES: To finely chop carrot, I coursely chop, put in a blender, add water to cover, then blend until carrots are desired consistency. Then drain and use in recipe. If you want to keep some of the nutrients, measure the water, and then subtract that amount of liquid from the broth. I also added the spinach when I add the carrot, garlic & jalapeno so it gets cooked more.

Yield 7 bowls

Number Of Ingredients 11

2 Tbs. extra vigin olive oil
2 Large white onions, thinly sliced
1.5 pounds bonless, skinless chicken breast
1 large carrot, shredded
1 jalapeno pepper with seeds, minced
2 tsp minced fresh thyme or oregano - 1 tsp if dried
8 cups fat free chicken broth
1 15 oz can black beans, drained
6 cups of baby spinach leaves, packed
1 15 oz can diced tomatoes
7 tbs grated parmesan cheese as garnish

Steps:

  • Heat oil in large stgockpot over medium heat. Add onions, cook 10 minutes, stirring occasionally. Add chicken, cook 5 minutes or until chicken is cooked. Serve topped with parmesan cheese. Makes 7 2-cup servings. Number of Servings: 7

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the soup will taste. This is especially important for the vegetables, which should be crisp and flavorful.
  • Don't overcook the vegetables: Overcooked vegetables will lose their flavor and nutrients. Cook them just until they are tender-crisp.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of yogurt for extra flavor.
  • Let the soup cool slightly before serving: This will allow the flavors to meld together. You can also store the soup in the refrigerator for up to 3 days, or freeze it for up to 3 months.
  • Serve the soup with a variety of toppings: This could include chopped fresh herbs, grated cheese, or croutons.

Conclusion:

Extreme diet soups can be a healthy and effective way to lose weight. However, it is important to choose a soup that is made with healthy ingredients and that you enjoy eating. By following the tips above, you can make sure that your extreme diet soup is both delicious and nutritious.
