Yield 6 servings

Number Of Ingredients 17

2 teaspoons fennel seeds
1 teaspoon coriander seeds
1 teaspoon whole black peppercorns
1 1/2 teaspoons kosher salt, divided
1/3 cup mayonnaise
2 tablespoons fresh lemon juice
3 tablespoons chopped fresh chives
4 garlic cloves, minced, divided
1/2 cup extra-virgin olive oil, divided
1 carrot, peeled, coarsely chopped
1/4 cup chopped red onion
2 teaspoons chopped fresh thyme
2 1/4 cups water
1/2 pound sugar snap peas
2 cups couscous
2 tablespoons chopped fresh dill
2 1/2 pounds ahi tuna steaks (about 1 1/4 inches thick)

Steps:

  • Combine first 3 ingredients in heavy small skillet. Toast over medium heat until fragrant, shaking skillet occasionally, about 3 minutes. Grind spice mixture in spice grinder. Transfer to bowl; mix in 1 teaspoon salt.
  • Whisk mayonnaise, lemon juice, chives, and half of garlic in small bowl. (Can be made 2 days ahead. Store spice mixture airtight at room temperature. Cover and refrigerate lemon aioli.)
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add carrot and onion and sauté until crisp-tender, about 3 minutes. Add thyme and remaining garlic and sauté 1 minute. Add 2 1/4 cups water and remaining 1/2 teaspoon salt; bring to boil. Add sugar snap peas and cook until crisp-tender, about 1 minute. Using slotted spoon, transfer peas to plate. Immediately add couscous to water in skillet and stir to combine. Cover and remove from heat. Let stand 5 minutes. Fluff couscous with fork. Transfer to bowl and cool completely. Mix in sugar snap peas and dill. Season to taste with pepper. (Couscous can be made 2 hours ahead. Let stand at room temperature.)
  • Prepare barbecue (high heat). Coat tuna with 6 tablespoons oil. Sprinkle with spice mixture. Grill tuna until seared outside and rare in center, about 4 minutes per side. Refrigerate uncovered for 1 hour, then cut into 1/2-inch-thick slices. Spoon couscous onto plates. Top with tuna and drizzle with lemon aioli.

Provided by Darcy Lenz

Time 1h55m

Yield 6

Number Of Ingredients 15

1 cup sushi rice, rinsed
1 ¼ cups water
8 teaspoons rice vinegar, divided
1 tablespoon white sugar
1 ounce 1/3 less fat cream cheese at room temperature
1 tablespoon kosher salt, divided
cooking spray
2 tablespoons lower-sodium soy sauce
1 teaspoon dark sesame oil
¼ teaspoon crushed red pepper
1 pound sushi-grade ahi tuna, cubed
½ cup cucumber - peeled, seeded, and diced
2 medium green onions, thinly sliced
1 large avocado, diced
½ tablespoon black sesame seeds, lightly toasted

Steps:

  • Combine rice and water in a medium saucepan over medium-high heat; bring to a boil. Reduce heat to low, cover, and cook until liquid is absorbed, about 20 minutes (do not uncover while cooking.) Remove pan from heat and let stand, covered, for 10 minutes.
  • While rice stands, combine 2 tablespoons vinegar and sugar in a small microwave-safe bowl; microwave on high until boiling, 30 to 45 seconds. Stir mixture with a whisk until sugar dissolves. Add cream cheese and 1/2 teaspoon salt to bowl, stirring with a whisk to combine. Gently fold vinegar mixture into rice using a rubber spatula; let stand for 5 minutes.
  • Generously coat 12 muffin cups with cooking spray. Lightly coat each of 12 (5-inch square) parchment paper pieces with cooking spray; press paper squares into muffin cups to form a liner. Using moistened hands, press rice mixture evenly along bottom and sides of muffin cups (about 2 1/2 tablespoons rice per cup). Refrigerate for 30 to 40 minutes.
  • Combine remaining 2 teaspoons vinegar, remaining 1/2 teaspoon salt, soy sauce, sesame oil, and red pepper in a medium bowl, stirring with a whisk. Add tuna, cucumber, green onions, and avocado to bowl. Toss gently to combine.
  • Divide tuna mixture evenly among rice cups; sprinkle evenly with sesame seeds. Gently remove cups from pan by lifting parchment paper edges.

TUNA CUPS

Time 15m

Yield 8 serving(s)

Number Of Ingredients 6

1 can solid white tuna
1 can Pillsbury Refrigerated Crescent Dinner Rolls
1/3 cup chopped celery
1/3 cup minced onion
1/4 cup mayonnaise (I use Hellman's)
1 cup grated cheese

Steps:

  • Preheat oven to 375 degrees.
  • In a bowl mix everything except the crescent rolls.
  • Separate triangles and mold into ungreased muffin cups.
  • Make sure the dough is up the sides.
  • Put tuna mixture inside the cups.
  • Bake for 10-15 minutes.

Tips:

  • Choose the right tuna: Opt for sushi-grade ahi tuna steaks for the best flavor and texture. If you can't find ahi tuna, you can substitute another type of tuna, such as yellowfin or albacore.
  • Sear the tuna properly: To get a nice crust on the outside and a tender, rare center, sear the tuna steaks for 2-3 minutes per side over high heat.
  • Make the sauce ahead of time: The avocado-lime sauce can be made up to 24 hours in advance. This will save you time when you're ready to assemble the cups.
  • Use fresh ingredients: The fresher the ingredients, the better the ahi tuna cups will taste. Look for ripe avocados, juicy limes, and crisp cucumbers.
  • Serve the cups immediately: Ahi tuna cups are best enjoyed immediately after they are assembled. The tuna will start to cook more if it sits for too long, and the avocado will start to brown.

Conclusion:

Ahi tuna cups are a delicious and easy appetizer or light meal. They're perfect for a party or a weeknight dinner. With a few simple ingredients and a little bit of time, you can create a dish that will impress your friends and family. So next time you're looking for a delicious and healthy recipe, give ahi tuna cups a try!
